Kodiak Cakes Flapjacks for Christmas Morning……or ANY Morning!!

 

My family LOVED the Kodiak Cakes Flapjacks!  I have to admit that I was intrigued when I received the box of Kodiak Cakes Flapjack and Waffle Mix because they proudly state that the product is all natural, whole wheat, oat and honey, no added fat, cholesterol or sugar.   Two 4 inch flapjacks have only 130 calories but they pack a big punch when it comes to taste!  Finally, we have a guilt-free way to enjoy pancakes!  

Kodiak Cakes is a family owned, Utah based company that was built on a family recipe that was passed down from one generation to the next.  The mix is a snap to make — you only have to add water and you magically have a healthy and flavor packed flapjack batter!

Now, back to our Kodiak Cakes Flapjack Breakfast….

The mix is a snap to make.  Just mix 1 cup of water with 1 cup of the Kodiak Cakes Flapjack Mix… what could be easier?

 

Then whisk….

I poured about 1/4 cup of the batter onto the hot griddle…..

They were bubbly on top and golden on the bottom so it was time to flip them…..

You know, flipping the pancakes is really the tricky part.  You have to make sure the bottom is lightly golden brown and the top is bubbly so the centers will be cooked…

These flapjacks were EASY to flip.  They were just the right size and the batter was just the right consistency.  These flapjacks came out perfect…every time!

Now, at this point, I have to tell you how this all went down….

I made one batch of the Kodiak Cakes, which makes 9 Flapjacks.  The first three went to Bruce, who immediately started eating them AND giving these flapjacks RAVE reviews….The second three went to Kacy who also raved about them….The last three were for me.  While I was cooking the last three ( for me),  Bruce jumped up and mixed up another batch of these delicious flapjacks and cooked the second batch of 9 all by himself!  When I asked him what he thought about these flapjacks, he said ” Why would we ever go back to traditional pancakes?”  The flavor and nutrition really put these flapjacks over the top for us!

The flapjacks were very fluffy and the flavor was of toasted oats with a little maltly wheat.

If you are counting calories, just top these with fresh fruit, yogurt,  sugar free syrup, or fat free whipped topping for a low calorie breakfast. Bruce does not like syrup or butter on pancakes so he sprinkled these flapjacks with powdered sugar.  I will add fresh blueberries to the batter the next time I make these for a nice special touch.

We give the Kodiak Cakes Flapjack and Waffle Mix 5 Stars!  All I can say is run to your nearest store and buy a couple of boxes of this mix because you will be making these flapjacks every morning!  And, with the holidays just around the corner, you can’t beat the convenience and your family will love the taste!
