I, personally, love chicken.  My son loves chicken.  My husband…. Well, he could take it or leave it.  And, unless it is fried, he usually will leave it.  He is a steak and potatoes kind of guy.

 

So, when it came to testing the Showtime 5500, I thought for sure I was going to rotisserie a chicken and be eating it for my lunch all week.  I was wrong.  I was very wrong.  I even had to go back to the grocery store to supplement since I didn’t have the chicken I KNEW would be left over.  But, how can anyone turn down a bird that looks this good? Right?

I prepped the chicken with some lemon and herbs, tied it with the food cord per the directions, stuck the bird on the rotisserie, and let it cook according to the recommendations based on my bird’s weight.  My home smelled divine.  When my  husband arrived home from work  he was stuck by the aroma, filled up his plate, and ate his whole serving.

 

What impressed my husband the most was the skin on the bird.  It was crisp.  It absorbed a lot of flavor and kept the chicken very juicy.  Best of all, the leftovers (though not as abundant as I had thought) were delicious.  My husband is actually looking forward to my next rotisserie chicken and has plans to explore all our options… turkey, veggies, beef, etc…

 

What impressed me the most was the clean up.  I knew it was easy to use.  I really liked that I could turn the heat off while keeping the rotation going.  So, while my side dishes finished cooking the chicken juices stayed evenly distributed.  But, I was worried that the clean up would be a chore.  Surprisingly, it was very simple.  I had to clean the drip tray which was easily removed and cleaned.  Then, I removed the heat shield and gave it a thorough wipe down.  All that was left was to wipe down the interior walls, clean the rotisserie element and put it all back together for next time.  My total time commitment for the cleanup was about 8 minutes.

Chocolate Chipotle BBQ Chicken Balls  are a delicious appetizer recipe that features Dove Chocolate Chipotle BBQ Sauce and Dove Sweet and Spicy Cocoa Rub.

I recently did a cooking demonstration for a group of Dove Chocolatiers and several of the Chocolatiers agreed to contribute their special recipes featuring Dove Chocolate…some are sweet, some are savory.

Chocolate Chipotle BBQ Chicken Balls

Ingredients
  • 1 pound ground chicken
  • 1 egg
  • 4 oz gorgonzola cheese
  • ½ t cumin
  • ½ t garlic salt
  • 1 bottle Dove Chocolate Chipotle BBQ Sauce
  • 1 T Dove Sweet and Spicy Cocoa Rub
  • 2 medium fresh mushrooms, diced
  • 1 cup Italian bread crumbs
Instructions
  1. Preheat oven to 375 degrees.
  2. Combine chicken, cheese, egg, cumin, garlic salt, mushrooms, and bread crumbs in mixing bowl. Add ½ cup of the Dove Chipotle BBQ Sauce and mix thoroughly with hands until well blended. Roll mixture into 16 golf ball size balls and place on cookie sheet. Dust each ball with the Cocoa Rub.
  3. Bake for 45 minutes.
  4. Heat remaining BBQ sauce and pour over the Chicken Balls.
  5. Serve hot.
  6. Makes 16 meatballs.

Mandarin Orange Chicken Wild Rice is as easy as it is delicious!

Only 4 ingredients and 5 minutes of your time and this great main dish will be dinner tonight.

Mandarin Orange Chicken Wild Rice

Ingredients
  • 2 pounds chicken tenders
  • 2 boxes ( 6 oz each) Long Grain and Wild Rice Original Recipe
  • 4 ounces canned sliced mushrooms, drained
  • 15 ounces Mandarin oranges in light syrup, undrained
  • 2½ cups water
Instructions
  1. Spray dutch oven or baking pan with a lid with non stick cooking spray.
  2. Place rice from both packages in the bottom of the pan.
  3. Sprinkle rice with 1 of the seasoning packets from the rice mix.
  4. Place chicken tenders over the rice.
  5. Sprinkle the drained mushrooms over the chicken. Pour the mandarin oranges with juice over the chicken and mushrooms.
  6. Sprinkle top with the other seasoning packet.
  7. Add 2½ cups water.
  8. Cover with lid and bake at 350 degrees for 1 hour and 40 minutes. Uncover and bake an additional 20 minutes.

Place rice in bottom of sprayed baking pan.  Sprinkle with 1 of the seasoning packets.

Add drained mushrooms, the mandarin oranges with juice and additional seasoning packet.

Pour 2 1/2 cups water over all.  Cover and bake at 350 degrees for 1 hour and 40 minutes.  Uncover and bake an additional 20 minutes.

Enjoy!  I paired this dish with Manfried Riesling. It was really wonderful!  This dry Riesling was the perfect pairing for this dish.

Looking for a crock pot chicken soup recipe?

Soup’s on…and the crock pot does all of the work! This Southwestern Chicken Soup Recipe  can be varied by using either Great Northern Beans ( as I have done here) OR Black Beans.  There are several optional garnishes you can top this soup with:  shredded cheddar cheese, chopped onions, chopped avocado, sour cream and/or a squeeze of fresh lime juice.  Delicious!

Crock Pot Southwestern Chicken Soup Recipe!

Southwestern Crock Pot Chicken Soup Recipe

  • 2 cans Great Northern Beans OR Black Beans, drained and rinsed
  • 1 pound chicken tenderloin, raw
  • 4 cups chicken broth
  • 1 cup of your choice of sliced mushrooms, chopped onion, chopped carrots, chopped celery to equal 1 cup
  • 1 cup frozen corn ( defrost and press with paper towel)
  • 16 ounces salsa
  • 1½ teaspoons Cumin
  • ½ cup sour cream to stir into the soup at the end
  • Optional garnishes: shredded cheddar cheese, chopped onions, chopped avocado, sour cream, fresh lime juice
Instructions
  1. Spray a 4 quart or larger crock pot with cooking spray. Combine the beans, chicken tenderloins, chicken broth, 1 cup of chopped vegetables, corn. salsa and cumin in the crock pot and cook on low for 6 to 8 hours or high for 4 to 5 hours.
  2. At the end of cooking time, use an immersible blender to blend a bit of the beans to thicken the broth.
  3. Stir in ½ cup of sour cream before serving.
  4. Set out the garnishes and let each person top their soup as desired.

Cook on low for 6 to 8 hours or high for 4 to 5 hours.

I followed the Lobel’s Guide to Grilling the Perfect Steak:

Bring steaks to room temperature; pat dry with a paper towel.

Preheat grill to maximum temperature.

 Rub both sides of the steak with coarse kosher salt and freshly ground black pepper.

Place the steaks 3 to 5 inches from the flame to sear the outside and seal in the juices.

Sear the steaks 2 to 3 minutes on each side.

After searing, remove from heat and brush with olive oil.  Return the steaks to the grill and cook on both sides to desired doneness.

Transfer the steaks to plates and let rest for 5 minutes before slicing and serving.

Quick Chicken Corn Chowder

Fall is in the air and it’s time to get a big pot of Quick Chicken Corn Chowder simmering on the stove!   

Chowder is typically a thick, rich soup that is made with cream.  This Quick Chicken Corn Chowder is chocked full of vegetables and meat to make a delicious and warming meal on a chilly Fall or Winter evening.  You can have this on the table in less than 30 minutes—-that’s less time than it takes to get a carry-out pizza!

Ingredients:

2 tablespoons butter

1/4 cup chopped onions

1/4 cup chopped celery

1 jalapeno pepper, seeded and chopped or 2 tablespoons canned chopped jalapeno peppers ( not pickled)

2 tablespoons flour

3 cups milk

2 cups chopped deli rotisserie  chicken

1 1/2 cups frozen corn

1 can cream style corn

1 teaspoon thyme

1/4 teaspoon ground red pepper

1 /8 teaspoon salt

Melt butter in a large soup pot over medium heat.  Add onion, celery and jalapeno; cook for 3 minutes or until tender, stirring frequently.

Add flour; cook 1 minute, stirring constantly.  

Stir in milk and blend well.  Add remaining ingredients.  Bring to a boil.  Reduce heat and simmer 5 minutes.

Serve up a big steaming bowl of Quick Chicken Corn Chowder topped with crumbled pieces of my Microwaved Bacon ( See Success Secret under a separate post).

Ingredients
  • 2 tablespoons butter
  • ¼ cup chopped onions
  • ¼ cup chopped celery

Cheese and Garden Herb Stuffed Chicken Breast Recipes

Here is one of my chicken breast recipes that looks like you spent a lot of time making it —-but you didn’t.  This stuffed chicken breast recipe is great for easy entertaining or family dinner.  Feel free to substitute other kinds of cheese in the filling.  I like to use Boursin cheese in place of the Garden Vegetable cheese for a different taste.

Ingredients
  • 4 boneless skinless chicken breasts
  • 1 small tub flavored cream cheese ( garlic and herb, chive and onion, or garden vegetable)
  • 1 cup Italian Style dried bread crumbs
  • 2 tablespoons Parmesan cheese
  • 4 tablespoons melted butter
Instructions
  1. Place one chicken breast each inside a gallon Ziplock bag, Flatten with a kitchen mallet.
  2. Place 1 or 2 tablespoons flavored cream cheese in center of each breast, roll up and secure with a toothpick. ( These can be flash frozen at this point and thawed and baked later. Check out my Success Secret under a separate post for flash freezing)
  3. Dip breasts first in melted butter and then in a mixture of bread crumbs and Parmesan cheese.
  4. Place in a greased 9 by 13 pan and bake at 350 degrees for approximately 35 minutes or until done.

Place 1 to 2 tablespoons cream cheese in center of each breast, roll up and secure with toothpicks.  (These can be flash frozen at this point and thawed and baked later.  Check out my Success Secret for Flash freezing under a separate post)

Dip breasts first in melted butter and then in a mixture of bread crumbs and Parmesan cheese.

Place in a greased 9 by 13 pan and bake for approximately 35 minutes or until done.  Note:  You could flash freeze the stuffed chicken breasts before baking to use at a later time.  Check out my Success Secret:  Flash Freezing for the easy step by step how-to info.

Remove from oven and serve.

Chicken Piccata sounds like it would be too fancy to make at home, but that is not so!  Here is a favorite recipe of mine…It is so fast and easy!  With just a few simple ingredients, your guests will be asking for seconds!

Chicken Piccata
 
Recipe type: Main Dish
Serves: 4
Ingredients
  • 4 boneless skinless chicken breasts, about 2 pounds
  • ¼ cup flour
  • 2 tablespoons each, oil and butter
  • ½ teaspoon salt and ¼ teaspoon pepper
  • ¼ cup dry white wine
  • 2 tablespoons capers, drained ( these are found in the olive section of the grocery store)
  • ¼ cup lemon juice
  • 3 tablespoons chopped fresh parsley
  • 4 thin slices each lemon and lime for garnish
Instructions
  1. Cut open one side on 4 large zip lock bags. Place one chicken breast inside each zip lock bag. Pound each chicken breast to ¼ inch thickness with the flat side of a meat mallet.
  2. Coat chicken on all sides with flour.
  3. Heat oil and butter in a large skillet. Add chicken. Brown quickly on both sides - about a minute or so on each side. Remove to a platter. Sprinkle with salt and pepper.
  4. Add wine, capers ( drained) and lemon juice to skillet. Heat to a boil, scraping down the sides and bottom of the pan. When 4 tablespoons remain, pour over the chicken breasts.
  5. Sprinkle with chopped fresh parsley and garnish with lemon and lime slices.
  6. Enjoy!

1/2 teaspoon salt and 1/4 teaspoon pepper

2 tablespoons capers, drained  (these are found in the olive section of the grocery store)

1/4 cup lemon juice ( fresh squeezed if possible)

3 tablespoons fresh chopped parsley

4 thin slices each lemon and lime for garnish

Directions:

Cut open one side on 4 large zip lock bags.  Place one chicken breast inside each zip lock bag and pound the chicken breast to 1/4 inch thickness using the flat side of a meat mallet.

 

Coat chicken breasts on all sides with flour.

 

Heat oil and butter in a large skillet.  Add the chicken.  Brown quickly on both sides – about 1 minute or so on each side.  Remove to platter.  Sprinkle with salt and pepper.

 

Add wine, capers and lemon juice to the skillet.  Heat to a boil, scraping down the sides and bottom of the pan.  When 4 tablespoons liquid remains, pour over the chicken.

Sprinkle with the fresh chopped parsley and garnish with the lemon and lime slices.  Enjoy!
