This Fiesta Crockpot Chicken recipe is one of the easiest and tastiest crockpot chicken recipes I have ever made!  

I love crockpot cooking because I can have delicious meals on the dinner table and my crockpot does all of the work.   This recipe bakes in the crockpot for a total of four hours on high.  The delicious sauce goes on during the last 30 minutes of cooking for a real Mexican taste sensation!

What Are Some of The Advantages of Crockpot Cooking?

  1. The biggest advantage to crockpot cooking is the convenience!  You can put recipe ingredients in the slow cooker before going to work in the morning and come home to a great home cooked  meal. Nothing beats coming home after a LONG day and being greeted by the wonderful aroma of a home cooked meal….ready for the table!  And, most crockpot recipes only take a few minutes to throw together in the morning so you are not stressed out with your busy morning schedule.    
  2. Less expensive cuts of meat such as a chuck roast are tenderized through the long cooking process of a slow cooker so you save money and have great meals!  My Mom’s Sunday Pot Roast Recipe is a great example of this. The crockpot is also an excellent choice for cooking many venison dishes.  Kacy likes to substitute venison in my “Italian Beef” recipe and it turns out great every time! 
  3. A crockpot won’t heat up the kitchen the way an oven will, which is a real plus on a hot summer day.  Our hot Illinois summers make us avoid turning on the oven because it gets too hot in the kitchen  Cooking with a crockpot avoids this dilemma and makes it possible to enjoy many of your favorite “normally oven baked” meals. 
  4. A slow cooker frees up your oven and stove top for other types of cooking or baking that you might like to do.  This can be especially important during the holidays, when you are cooking for a crowd and every bit of cooking space helps!  I use my crockpot to make “CrockPot Stuffing” for Thanksgiving.  
  5. There is  lot less clean-up with a slow cooker.  If you use Slow Cooker Liners, you have even less clean up!

Ingredients
  • 4 or 5 boneless, skinless chicken breasts
  • 16 oz salsa
  • 8 oz cream cheese, softened
  • 16 ounce can corn, drained
  • 1 can black beans, drained
  • 1½ cups shredded cheddar cheese or Mexican cheese blend
  • Garnish with slices of green onions, additional salsa and sour cream
Instructions
  1. Spray crockpot with Pam. Place chicken breasts into crockpot, cover and cook on HIGH for 3½ hours. Drain juices off.
  2. Mix together the softened cream cheese, salsa, drained corn and drained black beans. Pour over the chicken breasts and cook an additional 20 minutes.
  3. Sprinkle cheese on top. Cook 10 more minutes to melt the cheese.
  4. Serve over rice. Garnish with green onion slices, salsa and sour cream.

Cook the chicken breasts in the crockpot on HIGH for 3 1/2 hours.  Drain the juices off.  Stir together the softened cream cheese, salsa, drained corn and drained black beans and pour over the chicken.

Bake in the crockpot an additional 20 minutes.  Sprinkle cheese on top and bake another 10 minutes to melt the cheese.

Serve over rice.  I like to serve this over brown rice but any type of rice will do.  

Garnish with sliced green onions, additional salsa and dollops of sour cream. Ole!

Both Are Great Recipes for Easy Entertaining!

Both of these recipes use a cooking method that I really like when using the crockpot. The meat is cooked in the crockpot, then the juices are drained off and the savory sauce is added at the end of the cooking time.  This method produces meat that is fork tender and juicy and a sauce that is not mushy or bland.  Both of these recipes use common ingredients that you will probably have on hand and the finished product is extremely flavorful!

Also, the crockpot is very portable!  You can take it from your kitchen to the office or party.  Just plug it in and serve!  What could be easier!  And, most crockpots have a “WARM” setting so you can easliy keep the food warm at a party without continuing the cook it.

CrockPot Tips:

  1.  Remember …do not take the lid off of the crockpot during cooking unless the recipe instructs you to do so.  Every time you take the lid off of a slow cooker, it looses precious heat.  
  2. The extended cooking times of a crockpot allows for better distribution of flavors in many recipes.
  3. The slow cooker is NOT suited to every cooking task.  However, as you can see, the crockpot has many significant advantages.  
  4. If you are not sure what to make in your crockpot, check out the thousands of recipes online and on Pinterest.  There are literally thousands of crockpot recipes online to choose from!  The possibilities are virtually endless!

I’m definitely feeling those lazy days of summer so I’m turning to my crockpot for some tasty and easy summertime cookin’ !  This Crockpot Orange Chicken recipe is to die for!  I’m so glad I discovered this new technique for cooking chicken in the crockpot!  The secret of this recipe is to cook the chicken breasts on high for 3 hours and then DRAIN the juices off of the chicken before you add the sauce.  Then, the chicken only has to cook another 30 minutes slathered in the sauce.  This sauce is full of sticky and tangy goodness that will tantalize your taste buds! So give this recipe a try and let the crockpot do all of the work for you.

Ingredients

  • 1 cup sweet orange marmalade
  • 1 cup BBQ Sauce ( I used Sweet Baby Ray's Original Sauce)
  • 2 tablespoons Soy Sauce
Instructions
  1. Spray the crockpot with Pam.
  2. Place the chicken breasts into the crockpot. Cover and cook on HIGH for 3 hours.
  3. Drain the juices off.
  4. Mix the orange marmalade, BBQ Sauce and Soy sauce together and pour over the cooked chicken.
  5. Pour the sauce over the chicken in the crockpot. Cover and cook on high another 30 minutes.

Spray the crockpot with Pam.  Place the chicken breasts into the crockpot.  Cover and cook on HIGH for 3 hours.

After 3 hours, drain the juices off of the chicken.  Mix the sauce ingredients together ( sweet orange marmalade, Sweet Baby Ray’s Original BBQ Sauce and the Soy Sauce)

Pour the sauce over the chicken breasts.  Cover and cook on HIGH 30 more minutes.

Gobs of Chocolate is just one of the many yummy chocolate desserts you can make in the crock pot!  I remember all of the great chocolate desserts my grandma used to make…and the wonderful smells that came out of the kitchen when she was cooking.  This recipe takes me back to her kitchen when I smell this gooey chocolate dessert cooking in the crock pot.  And…the best part is the crock pot does all of the work!  It cooks in only 2 hours on High so it’s also a great recipe for entertaining.  I made this last week and there wasn’t even a bite leftover!  Serve it with vanilla ice cream and get set for some WOWS!

Ingredients
  • 1 box Betty Crocker fudge brownie mix
  • ½ cup butter melted
  • 4 eggs
  • 1 pouch Betty Crocker chocolate chip cookie mix
  • Vanilla ice cream, for serving
Instructions
  1. Spray a 4½ quart crock pot with cooking spray and lightly dust with flour.
  2. In a large bowl, mix the brownie mix with ¼ cup melted butter and 2 of the eggs.
  3. In another large bowl, mix the chocolate chip cookie mix, remaining ¼ cup melted butter and remaining 2 eggs.
  4. Drop alternate spoonfuls of the brownie mix and chocolate chip cookie batters into the crock pot.
  5. Cover and cook on high for 2 hours or until cake is set in the center.
  6. To serve, spoon cake out of the crock pot and top with big scoops of vanilla ice cream.

Let’s Make Chunky Beef Stew in The Crock Pot!

My Chunky Beef Stew goes together in a snap and your crock pot does the rest of the work!  This stew is full of hearty beef chunks, bacon, potatoes, baby carrots, whole pearl onions and mushrooms and cooks up in a tomato and brown gravy sauce.  This is sure to warm you up on a cold winter day!

Chunky Beef Stew Recipe:

Ingredients
  • 2 pounds beef stew meat
  • 4 bacon slices, cut in 1 inch pieces
  • 2 12 oz jars brown gravy
  • 14.5 oz can diced peeled tomatoes with the juice
  • 1 teaspoon dried thyme leaves
  • ½ teaspoon salt and ¼ teaspoon black pepper
  • 1 pound fresh whole baby carrots
  • 8 new red potatoes, quartered
  • 10 oz bag pearl onions OR 2 small onions, cut into eights
  • 8 oz whole fresh mushrooms
  • 1 cup red wine ( optional - but I always add it)
Instructions
  1. In medium skillet, cook the bacon ( I use kitchen scissors to cut it up quickly) and the beef stew meat until browned. Do not drain.
  2. Combine the beef stew meat, bacon and liquid in the crock pot along with the rest of the ingredients.
  3. Cook on low for 8 to 10 hours.

Ingredients..( The only thing I added was the optional 1 cup of red wine because I really like the depth of flavor the wine adds to this stew)

Success Secret:  Use kitchen scissors to easily cut the meat into pieces!

Use kitchen scissors to cut the bacon into pieces and then brown the bacon and stew meat in a skillet.

Add the browned meat along with the liquid from the skillet to a sprayed crock pot and add the remaining ingredients.  Note:  If you are using the pearl onions, boil them separately for about 3 minutes, cut off the ends and the skins should slide right off.  The other option is to use 2 small onions and cut them into eights , however I really like the look of the pearl onions best.

Now just set the crock pot on low and let it simmer away for 8 to 10 hours.  You won’t believe the aroma that will fill your kitchen as this stew cooks!  If you don’t have 8 to 10 hours to let this cook on low…no worries!  You can let it cook on high for 3 hours and then turn it to low for another 3 hours and that will work just fine.

Soup’s on…and the crock pot does all of the work! This Southwestern Chicken Soup Recipe  can be varied by using either Great Northern Beans ( as I have done here) OR Black Beans.  There are several optional garnishes you can top this soup with:  shredded cheddar cheese, chopped onions, chopped avocado, sour cream and/or a squeeze of fresh lime juice.  Delicious!

  • 2 cans Great Northern Beans OR Black Beans, drained and rinsed
  • 1 pound chicken tenderloin, raw
  • 4 cups chicken broth
  • 1 cup of your choice of sliced mushrooms, chopped onion, chopped carrots, chopped celery to equal 1 cup
  • 1 cup frozen corn ( defrost and press with paper towel)
  • 16 ounces salsa
  • 1½ teaspoons Cumin
  • ½ cup sour cream to stir into the soup at the end
  • Optional garnishes: shredded cheddar cheese, chopped onions, chopped avocado, sour cream, fresh lime juice
Instructions
  1. Spray a 4 quart or larger crock pot with cooking spray. Combine the beans, chicken tenderloins, chicken broth, 1 cup of chopped vegetables, corn. salsa and cumin in the crock pot and cook on low for 6 to 8 hours or high for 4 to 5 hours.
  2. At the end of cooking time, use an immersible blender to blend a bit of the beans to thicken the broth.
  3. Stir in ½ cup of sour cream before serving.
  4. Set out the garnishes and let each person top their soup as desired.

Crock Pot Seasoning Mix: Hearty Beef Stew

Crock Pot Seasoning Mixes are new in grocery stores and they are a great time saver for busy cooks.  There are currently three mixes available:

These were recently featured in Family Circle Magazine as a “Big Hit”….and I agree!

I reviewed the BBQ Pulled Pork Seasoning mix under a separate post:  BBQ Pulled Pork Seasoning Mix Review .  I really loved the BBQ Pulled Pork Seasoning Mix and was just as pleased with the Hearty Beef Stew Seasoning Mix.  The mix produced a stew with a deep and hearty flavor that simmered in the crock pot all day.

I followed the directions on the packet for the beef stew.  It only took a few minutes to assemble the stew and then the crock pot did the rest of the work!

The stew cooked on low for 8 hours and the flavor was really amazing!  If you are in a hurry, you can cook it on high for only 4 hours. 

In addition to beef stew, this seasoning packet can be used to make several other recipes in the crock pot.  The Crock Pot Seasoning Mix  website has several delicious recipes I want to try.  I want to make the Beef Burgundy next — it looks so easy and good!

    I also want to try the Slow Cooked Pepper Steak recipe.    

I love the versatility of the Crock Pot Seasoning Mixes.  The Hearty Beef Stew Seasoning Mix can be used to make beef stew or a variety of other great dishes such as the two I’ve shown above.

Crock-Pot Seasoning BBQ Pulled Pork Mix Review

Crock-Pot Seasoning Mixes have just been released in stores and what better time of year than fall to review these down-home, comfort food creations!  Any time of year is perfect for crock pot cooking.  In the spring and summer, crock pot cooking helps keep your kitchen cool.  In the fall and winter, crock pot cooking allows you to create delicious soups, stews and main dishes that are full of that wonderful slow cooked flavor.

I think the Crock-Pot Seasoning Mixes are really exciting!  They are a big time saver for a busy cook and allow you to create easy and creative main dishes with only a few ingredients.  There are currently three mixes that are available:

  • BBQ Pulled Pork
  • Savory Pot Roast Mix
  • Hearty Beef Stew Mix

The BBQ Pulled Pork was first on my list!  As many of you know, I have deep Southern roots and BBQ is near and dear to my heart. ( In fact, I was shocked when I moved north and discovered that there is not one BBQ barn, shack, or restaurant within a 60 mile radius of here!)

I made the BBQ Pulled Pork exactly as the directions on the packet suggested.  I used a  3 pound Boston Butt roast along with the Crock-Pot BBQ Pulled Pork Seasoning Mix, 1/2 cup ketchup, 1/2 cup dark  brown sugar, 1/3 cup cider vinegar and 1 cup water.  I cannot even begin to describe the wonderful aromas that came drifting out of my kitchen as the pulled pork cooked away in the crock-pot all day!

At the end of the cooking time, I “pulled” the pork……

……and served it up on buns!

I LOVED the flavor of this pulled pork!  It reminded me of BBQ I used to eat in the South —-sweet yet spicy.  I will definitely make this again ( and again ) when I’m in the BBQ mood. 

The Crock-Pot Seasoning Web Site  has additional recipes you can make that are creative uses for these mixes.  I can’t wait to try their recipe for BBQ Apple Pork Chops!  Thick pork chops cook in the slow cooker with onion, apples, apple juice, white vinegar, mustard and of course the Crock-Pot BBQ Pulled Pork Seasoning Mix.  It looks absolutely wonderful!  I’ll be reviewing the other mixes as well, but for now…..I’m thinking about having another Pulled Pork Sandwich!

This Crock Pot Spaghetti recipe is so easy – don’t wait long to make it!  The spaghetti sauce cooks all day in the crock pot and when  you get home, you’ll be greeted  by the wonderful aroma of homemade goodness!  The best part is –  you add the dry spaghetti the last 30 minutes and it cooks to perfection in the sauce.  No extra pans to wash!  This recipe makes a lot and we always look forward to leftovers.

Recipe type: Pasta
Ingredients
  • 2 pounds ground chuck, browned and drained
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 29 ounces tomato sauce
  • 3 teaspoons Italian seasoning
  • 1½ teaspoons salt
  • ¼ teaspoon pepper
  • 8 ounce can sliced mushrooms, drained
  • 6 cups tomato juice
  • 16 ounce package thin spaghetti - broken in half
  • Grated Parmesan cheese ( optional for serving )
Instructions
  1. Combine all ingredients except the dry spaghetti and the cheese in a 6 quart slow cooker.
  2. Cover and cook on LOW 6 to 8 hours or HIGH 3 to 5 hours.
  3. Turn to HIGH during the last 30 minutes and stir in the dry spaghetti.
  4. Note: If you use anything other than thin spaghetti, you may need to continue cooking another 10 minutes.

Mom’s Sunday Pot Roast Recipe

My Mom made this pot roast recipe every Sunday when I was growing up.  Slow cooker recipes are great for the busy cook!  I’ve added the secret trick to lump free gravy and with the crock pot convenience this is hard to beat!

This crock pot pot roast dinner is full of down-home goodness!  And, I’ve included a “success secret” for lump free gravy — every time!

Mom's Sunday Pot Roast Dinner
 
Recipe type: Main Dish, Crock Pot
Serves: 6
Ingredients
  • 3 cups baby carrots
  • 6 to 7 potatoes, peeled and cut in half
  • 3 pound chuck roast
  • 1 can Cream of Mushroom soup
  • 1 can French Onion soup
  • 2 onions, peeled and cut in half
  • Salt and pepper
Instructions
  1. Spray the crock pot with cooking spray.
  2. Place the baby carrots and potatoes into the crock pot. Season with salt and pepper.
  3. Place the chuck roast on top of the vegetables. Season with salt and pepper.
  4. Pour the Cream of Mushroom soup and French Onion soup on top of the roast.
  5. Place the onions on top.
  6. Cook on LOW for 10 hours.
  7. Remove the roast and vegetables. Turn the crock pot on HIGH and sprinkle in Wondra instant flour. Whisk until thickened - about 1 minute.

Ingredients:

3 cups baby carrots

6 to 7 peeled potatoes, cut in half

3 pound chuck roast

1 can Cream of Mushroom soup

1 can French Onion soup

2 onions, peeled and cut in half

Salt and pepper

 

Spray the crock pot with non stick cooking spray.  Place the carrots and potatoes in the crock pot and season with salt and pepper.

Lay the roast on top of the vegetables.  Sprinkle with salt and pepper.

Pour one can of Cream of Mushroom soup and one can of French Onion soup on top of the roast.  Place the onions on top.

Cover and cook on LOW for 10 hours.

 

When ready to serve, remove the roast and vegetables to a platter. Turn the crock pot on HIGH and whisk Wondra instant flour into the liquid to make the gravy.  Whisk until thickened – about 1 minute.
