This Bubbling Southern Style Fresh Peach Cobbler Is Perfect For Summer Nights!

Summer is in full swing and juicy-sweet fresh peaches are available so I decided to make a delicious Fresh Peach Cobbler.   Sweet local peaches are baked in an easy pastry crust and I absolutely LOVE this Fresh Peach Cobbler recipe!  I’ve made it in my small cast iron skillets for individual servings and I’ve also made the same recipe as a Freestyle Peach Tart.  It is incredible either way!  This is the PERFECT ending to any summertime meal.

Savor the flavors of summer with sliced fresh peaches that bake in a flaky crust along with cinnamon and sugar…WOW!

Top the Fresh Peach Cobbler with a big scoop of vanilla ice cream.  When you make this, it’s best to use fresh peaches.  Just peel, remove the pits and slice the peaches.  The ready-to-use piecrust makes this recipe super simple!  You can have this Fresh Peach Cobbler ready for the oven in less than 15 minutes!

Ingredients
  • 2 ready-to-use refrigerated pie crusts
  • ⅓ cup sugar
  • 1 tsp. ground cinnamon
  • 4 ounces ( ½ of an 8 oz package) cream cheese, softened
  • 3 large fresh peaches, peeled and sliced
  • Vanilla Ice Cream for serving
Instructions
  1. Preheat oven to 400 degrees.
  2. Spray the individual skillets with cooking spray.
  3. Place one pie crust in each individual skillet.
  4. Mix sugar and cinnamon; add 1 tablespoon of the cream cheese to this mixture. Spread on each crust.
  5. Reserve 1 tablespoon of the sugar mixture.
  6. Toss the peaches with the remaining sugar mixture; spoon into the individual pie crusts.
  7. Fold the edge of the crust over the peaches, leaving center uncovered. (Trim excess crust and use for cinnamon-sugar treats,etc)
  8. Sprinkle each cobbler with the remaining sugar mixture.
  9. Bake 25 minutes or until the crust is golden brown and the fruit juices are bubbly.
  10. Cool slightly and serve topped with vanilla ice cream

I love to celebrate strawberry season by making strawberry desserts as often as I can!  I still like to go to Strawberry Farms every May and pick my own berries. However, even after the strawberry season has passed in Illinois, we can still find an abundance of beautiful, juicy berries in our local grocery stores and farmer’s markets.  Whether you serve my Fresh Sugared Strawberries, my Best Ever Strawberry Shortcake or create this Fresh Strawberry Dessert Flower… you will not be disappointed!  This Fresh Strawberry Dessert Flower is impressive enough for company but is super simple to make.  It starts with a creamy and sweet base made of just three ingredients and then the “flower” is assembled on top of the base.  I like to add some fresh blueberries for color and then top it off with my Easy Strawberry Sauce.

Base:
  • 8 oz. cream cheese
  • 7 oz. marshmallow topping
  • 1 Tbs. mayonnaise
Strawberry Flower:
  • Fresh Strawberries, cut in half
  • Fresh blueberries

Instructions
  1. Using an electric mixer, beat together the cream cheese, marshmallow cream and mayonnaise.
  2. Mound the cream cheese mixture onto the center of a serving plate.
  3. Slice the strawberries in half as shown in the picture, from the tip of the berry to the stem.
  4. Beginning on the outside edge to the cream cheese mound, place the strawberries around the outside edge of the mound.
  5. Continue placing the strawberries around the circle to resemble petals. Leave a small circle in the center open and sprinkle fresh blueberries in the center.
  6. Sprinkle additional fresh blueberries over the petals.
  7. Drizzle the Easy Strawberry Sauce over the Strawberry Flower.
  8. If desired, decorate the outside edge of the plate by making dots with the Strawberry Sauce and connecting the dots using a toothpick.



If you have any of the cream cheese mixture leftover, you can use it as a yummy dip for any fresh fruit. The Strawberry Sauce is also great served on pancakes, waffles, crepes or on top of ice cream.  You can also use it to make Strawberry Milk.

On the fun side of things, I often have trivia questions in my Culinary Arts classes.  One of the trivia questions I ask is, “What fruit wears it’s seeds on the outside?”.  The answer is “Strawberries!”  Here are some more Strawberry Fun Facts!

 Summer is in full swing and so is our summertime entertaining.  I love to serve an ice cream bar for dessert and my guests can help themselves.  Set out various flavors of ice cream chilled in a tub of ice along with a plate of brownies and these cute Sprinkled Ice Cream Cones.  Also offer various toppings for the ice cream such as

  • Chopped nuts
  • Shredded coconut
  • Additional decor sprinkles
  • Various flavors of syrup such as chocolate or butterscotch

These Sprinkled Ice Cream Cones are so quick and easy to make!  All you need is a package of sugar cones, some vanilla almond bark or white chocolate and sprinkles decor in whatever colors you choose.

  • 1 box of sugar ice cream cones
  • almond bark or white chocolate
  • sprinkles decor
Instructions
  1. Melt the almond bark in the microwave for 90 seconds. Stir and microwave an additional 15 seconds. Stir.
  2. Using a pastry brush, brush the melted almond bark around the top edge of the ice cream cones.
  3. Sprinkle on the decor.
  4. Set the cones on a piece of waxed paper to let the almond bark dry.

Gobs of Chocolate is one of many great chocolate desserts you can make in the crock pot!

Wouldn’t you love to make chocolate desserts like grandma used to make….but in the crock pot?

Gobs of Chocolate is just one of the many yummy chocolate desserts you can make in the crock pot!  I remember all of the great chocolate desserts my grandma used to make…and the wonderful smells that came out of the kitchen when she was cooking.  This recipe takes me back to her kitchen when I smell this gooey chocolate dessert cooking in the crock pot.  And…the best part is the crock pot does all of the work!  It cooks in only 2 hours on High so it’s also a great recipe for entertaining.  I made this last week and there wasn’t even a bite leftover!  Serve it with vanilla ice cream and get set for some WOWS!

Ingredients
  • 1 box Betty Crocker fudge brownie mix
  • ½ cup butter melted
  • 4 eggs
  • 1 pouch Betty Crocker chocolate chip cookie mix
  • Vanilla ice cream, for serving
Instructions
  1. Spray a 4½ quart crock pot with cooking spray and lightly dust with flour.
  2. In a large bowl, mix the brownie mix with ¼ cup melted butter and 2 of the eggs.
  3. In another large bowl, mix the chocolate chip cookie mix, remaining ¼ cup melted butter and remaining 2 eggs.
  4. Drop alternate spoonfuls of the brownie mix and chocolate chip cookie batters into the crock pot.
  5. Cover and cook on high for 2 hours or until cake is set in the center.
  6. To serve, spoon cake out of the crock pot and top with big scoops of vanilla ice cream.

Fruit trays are a great way to entertain because they can be made ahead of time and and this Pineapple Palm Tree really adds some tropical whimsy to your party!  Check out my Video Tutorial on making this Pineapple Palm Tree:

This fruit tray has the pineapple from the cored pineapples I used for the Palm Tree, fresh strawberries, blueberries. and watermelon. You can use a cookie cutter to cut the watermelon into festive shapes.  I used a heart shaped cookie cutter for this fruit tray.  If you are cutting the watermelon into shapes, just cut any remaining watermelon into cubes and place at the back of the fruit tray.  Other great choices for fruit trays are honeydew melons, cantaloupes, white and red seedless grapes, and  sliced apples ( that have been dipped in orange juice).

Sticky Date Pudding is an easy dessert that is great anytime of the year. This recipe has been a tradition in my family for as long as I can remember and we always bake the Date Pudding in a cast iron skillet.  Date Pudding bakes with a luscious gooey layer of caramel sauce under the tender cake that is filled with dates and pecans.  Scoop up some Sticky Date Pudding and top it off with a big dollop of Homemade Whipped Cream and get ready to swoon!

Let’s Start Baking!

This is a “Make Life Special” quick and easy dessert so grab your cast iron skillet and let’s start baking!

This is a "Make Life Special" Southern treat! Grab your cast iron skillet and get ready to bake!

Ingredients
  • 1½ cups warm water and 1½ cups dark brown sugar
  • 1 cup sugar
  • 1½ cups flour
  • 1 cup chopped dates
  • ½ cup chopped nuts
  • 2 teaspoons baking powder
  • 1 cup milk
Instructions
  1. Combine warm water and dark brown sugar in a 10 inch cast iron skillet. Set aside.
  2. Combine remaining ingredients and mix thoroughly. Pour this batter into the syrup.
  3. Bake at 350 degrees for 35 minutes. The top should be lightly browned.
  4. Serve warm with whipped cream.

Here is an easy cherry cobbler recipe that you will make again and again!  We all need easy dessert recipes that we can count on for great taste.  I always serve this with a big scoop of vanilla ice cream on top of the warm cobbler.

Serve Cherry Cake Pudding with Vanilla Ice Cream

This cherry cobbler recipe (which I have always called Cherry Cake Pudding) is a WOW on the delicious chart!  You can have this in the oven in less than 5 minutes and your family will swoon when you serve this with a dollop of vanilla ice cream on top.  If you want to make it fancy, spoon it into a martini glass and get ready for everyone to ask for seconds!

  • 2 cans cherry pie filling
  • 1 package dry white cake mix
  • 2 sticks margarine or butter, melted
  • ½ cup chopped nuts
  • ½ cup coconut ( optional)
Instructions
  1. Butter a 9 X 13 inch glass baking dish.
  2. Spread the pie filling on the bottom of the pan.
  3. Sprinkle the dry cake mix on top of the pie filling.
  4. Drizzle the melted margarine over the dry cake mix.
  5. Sprinkle the nuts ( and coconut, if using) on top.
  6. Bake at 350 degrees for 40 minutes.

Spray or butter the baking dish.

Marshmallow Charger Plates for Your Holiday Dessert Table

I have to thank my friend Oma for this great idea for Marshmallow Charger Plates!  She made two of these for her Christmas Party dessert Table last weekend.  Here is the other Marshmallow Charger Plate…

 

She started with a round Styrofoam ring and stuck toothpicks into the ring.  Then she stuck the marshmallows onto the toothpicks.  She placed a plate into the center and the magic of the holidays began!  She served  Dove Chocolate Discoveries Truffle Brownies on one and Strawberry and Brownie Skewers on the other one.  

This added so much fun to the dessert table and was really easy to make!

“The Rosie’s Bakery All-Butter, Cream-Filled, Sugar-Packed Baking Book” by Judy Rosenberg

I am happily baking my way thru this cookbook review of The Rosie’s Bakery All-Butter, Cream-Filled, Sugar-Packed Baking Book!  With a title like that and over 250 decadent recipes, who could resist this cookbook?  Every recipe is a winner!

Tonight we are having company over for Chili and I have decided to set up a brownie sundae bar with Rosie’s Chocolate Orgasm Brownies ( that’s really the name!) along with ice cream and several sundae toppings for an over the top dessert.

Look at how yummy they are:

There are so many things that I love about this cookbook!  First of all, every recipe is easy and Judy Rosenberg walks you thru the recipe step by step  — it’s like having your own baking instructor right in the kitchen with you!  And speaking of the author, after reading the Introduction to the book entitled “Meet Rosie”, I feel like Judy Rosenberg is an old friend!

She did not start out to be a baker.  In fact, she has no real formal training in baking.  She says people are absolutely amazed when she tells them that everything she knows about baking, she learned on her own.  I think that is why I LOVE her recipes and this cookbook so much.  She relates to ME.  I can easily understand her explanations on the various steps in baking in Chapter 1 ” Common Sense Baking”.  She says, ”  I don’t mean to denigrate expertise, but all this training business should be put in perspective.  Baking does involve chemical reactions, but so does taking an aspirin.  While you may not reach baker’s heaven on your first try, if good food is important to you, if you like desserts, and if you count, none of the recipes in this book are beyond you.”  

Judy started out baking in her second-floor apartment in Cambridge Massachusetts and selling her wares to a local Cheesecake shop.  It was during this time that she perfected some of her very famous recipes – Boom Booms, Harvard Squares, Chocolate Orgasms, Queen Raspberries- and the legend was born.  She went on to open her own shop three years later and named it Rosie’s.  The rest is history….and her success and recipes are inspiring.

This book combines the best of her previous books, Rosie’s Bakery All-Butter, Fresh Cream, Sugar-Packed, No-Holds-Barred Baking Book and Rosie’s Bakery Chocolate-Packed, Jam-Filled, Butter-Rich, No-Holds-Barred Cookie Book , and adds 40 never-before-published recipes.  It’s a collection of ultimate, honest to goodness , indulgent dessert delights!

Most of the recipes are simple to make and don’t use a ton of ingredients.  Rosie’s Award Winning Brownies, featured on page 259 of the book, only have 6 main ingredients (plus nuts if you choose to add them) .  Judy spent years perfecting this fantastic recipe and now it can be yours!  The brownie recipe is the basis for the Chocolate Orgasims which I mentioned earlier.  Judy says, ” To me, brownies constitue one of the basic food groups, and these were simply the most luscious to be had.”  I agree!

I wholeheartedly recommend this book for anyone on your holiday gift list who loves baking, cooking or the kitchen in general!  The author says about this cookbook , “It was to be a cookbook that grew dog-eared and smudged with fingerprints from generations of use while the recipes wormed their way into family lore and got trotted out with the old photos…..I still hope for something like that.  But, as I mentioned earlier, my more immediate goal is to demystify baking through common sense, because I’m convinced that that is the key to successful and happy baking.”  All I can say is HAPPY BAKING!
