Make Life Special is all about cooking great food for your family and friends while using recipes that are quick, delicious and easy.  Sheet pan dinners are just the ticket!  This Roasted Salmon recipe is fuss free cooking at it’s best.   I don’t know what took me so long to discover this simple method of cooking but now I’m grabbing my sheet pan almost every day to roast something!  I like to roast a sheet pan full of fresh vegetables every night.  Roasting is a healthy way to cook and the vegetables develop a delicious caramelization that would satisfy even the most picky palate.   Sheet pan cooking allows you to cook your main dish and your side dish both at the same time and in the same pan.  Clean up is a breeze too because you line the sheet pan with aluminum foil before assembling the recipe.  Easy…breezy!

Cook your main dish and your side dish in one pan in under 30 minutes!

Ingredients
  • ½ pound fresh green beans
  • 1 ear fresh corn, kernels cut from the cob
  • 6 oz. cherry tomatoes
  • 2 tablespoons olive oil
  • 1 pound fresh salmon fillet
  • ¼ cup sour cream
  • 2 tablespoons fresh dill, roughly chopped PLUS two sprigs of fresh dill to top the salmon fillets
Instructions
  1. Preheat the oven to 425 degrees.
  2. Line a baking sheet with aluminum foil.
  3. Toss the green beans, corn and tomatoes with the olive oil and arrange on the pan in a single layer.
  4. Place the salmon in the center, skin side down; season with salt and pepper. Place a spring of fresh dill on top of each fillet.
  5. Roast until the vegetables are tender and browned in spots and the salmon is just opaque in the center, about 20 minutes.
  6. Meanwhile, in a small bowl, mix the sour cream and 1 tablespoon of the dill; season with salt and pepper.
  7. Sprinkle the salmon with the remaining dill and serve with the sauce.
  8. Enjoy!

Variation:

Feel free to substitute other vegetables  in this recipe.  You might try baby carrots with fingerling potatoes or broccoli florets with cherry tomatoes.  Vary the vegetables to suit your taste buds!

This sauce only has 2 ingredients but it adds balance to this dish.

You can make the dill sauce ahead of time.  It will keep for a couple of days in the refrigerator.

Beef and Noodles Recipe

This Beef and Noodles recipe is one of my favorite go to recipes for an easy family dinner.

With this recipe on hand you will have the answer to “What’s for dinner tonight?”  This  Beef and Noodles recipe is real comfort food. I love to make this on  a cold winter day like today and it is super easy to make. This bakes in the oven for 4 hours so it’s a great recipe to make when you have other things to do because the oven does all of the work.    

Beef and Noodles
 
Serves: 8
Ingredients
  • 1 pkg dry onion soup mix
  • 4 cups water
  • 1 can cream of mushroom soup
  • 3 lb boneless beef chuck roast
  • 12 oz kluski noodles, uncooked
  • 2 cups additional water
Instructions
  1. Combine soup mix and water in a roasting pan; stir in soup.
  2. Place roast in pan on top of soup mixture.
  3. Cover with lid and bake at 350 degrees for 4 hours ( yes 4 hours!)
  4. Remove roast from oven and shred the meat, using two forks.
  5. Add the dry noodles to the shredded roast in the pan and add an additional 2 cups of water.
  6. Reduce the oven temperature to 300 degrees. Cover and bake an additional 30 minutes, stirring after 15 minutes.

Beef & Noodles Ingredients

 

Combine onion soup mix and water in a roasting pan; stir in the cream of mushroom soup.

Whisk Soups and Water Together

 

Place roast on top of the soup mixture.

Add Beef Chuck Roast

 

Cover and bake at 350 degrees for 4 hours. ( Yes…4 hours!)  Remove from the oven and shred the beef using two forks.

Add the dry noodles and additional 2 cups of water to the pan and stir.  Reduce oven temperature to 300 degrees.

Stir

 

Cover with the lid and return to the oven for an additional 30 minutes.  Stir after 15 minutes.

Hamburger Quiche

You can have this ready for the oven in about 10 minutes and it bakes in 35 to 45 minutes.  I use a frozen deep dish pie crust for convenience.  Your family is going to love this!  You may want to make two and freeze one for later.  Enjoy!

  • 9 inch deep dish frozen pie shell
  • ½ pound ground beef
  • ½ cup real mayonnaise
  • ½ cup milk
  • 2 eggs, beaten
  • 1 tablespoon cornstarch
  • ¼ cup chopped green pepper
  • ¼ cup chopped green onion
  • 1½ cups shredded cheddar or Swiss cheese
  • Salt and pepper
Instructions
  1. Brown the ground beef and drain.
  2. Mix mayonnaise, milk, cornstarch and eggs.
  3. Stir in meat, cheese, onion and pepper.
  4. Pour into unbaked frozen deep dish pie shell. Place on a cookie sheet and bake at 350 degrees for 35 to 45 minutes or until center is set.

Ingredients:

9 inch frozen deep dish pie shell

1/2 pound ground beef

1/2 cup mayonnaise

1/2 cup milk

2 eggs, beaten

1 tablespoon cornstarch

1/4 cup chopped green pepper

1/4 cup chopped green onion

1 1/2 cups shredded cheddar or Swiss cheese

Salt and pepper
