A Pineapple Boat is a creative and easy way to serve fruit salads , chicken salads or fruit dips!

Add some tropical flair to your next brunch, lunch or party by serving your salads or fruit dips in a cute pineapple boat!  It is quick and easy to make a pineapple boat and the fresh pineapple you remove will go right into your fruit salad!

  • Start with a fresh pineapple that has an attractive top.  The leaf top will be a part of the pineapple boat and you want to choose a pineapple that looks fresh.  Buy a pineapple that has a light pineapple scent with a firm skin.  An overpowering pineapple scent or a skin that indents easily indicates a pineapple that is overripe.
  • You will need two knives.  You will need a large knife to cut the pineapple in half and a smaller knife to remove the inside of the pineapple.

Place the pineapple on a cutting mat and turn it to find the most attractive and stable way for it to sit.  Remember, you don’t want the pineapple boat to roll over once it if filled with a salad or fruit dip!

Cut the pineapple in half and remove the inside of the pineapple to create a “boat”.

Fill the Pineapple Boat with a fruit salad, chicken salad or a fruit dip.  I filled my Pineapple Boat with my yummy Pina Colada Dip and served it with a  Pineapple Palm Tree Fruit Tray.  These little added touches really created a “WOW” for my guests!  Be sure to watch my how-to video below on How to Make a Pineapple Boat.

Cool Summer Salad

This recipe was given to me over 30 years ago by my girl’s Grandma Great.  It’s full of pineapple, mandarin oranges, marshmallows and creamy vanilla pudding.  It goes together in a snap and you can serve this as a side salad or a light summertime dessert. This can also be made ahead and frozen until needed.  Our family has enjoyed this recipe many times over the years and I think your family will like it too!

 

Cool Summer Salad
 
Recipe type: Salad
Ingredients
  • 20 oz can crushed pineapple
  • 3.4 oz package instant vanilla pudding
  • 8 oz Cool Whip, thawed
  • 1 cup miniature marshmallows
  • 15 oz can mandarin oranges, drained
Instructions
  1. Mix crushed pineapple and dry pudding mix together.
  2. Fold in the Cool Whip.
  3. Stir in mandarin oranges and marshmallows.
  4. Chill well before serving.
Notes
This can be made ahead and frozen until needed.

 

Mix pineapple with dry pudding mix.

Fold in Cool Whip.

 

Add oranges and  marshmallows.

Stir to combine and chill until serving time.  To serve as a dessert, place Cool Summer Salad in Martini glasses or individual serving bowls.

Vickie’s Pineapple Cream French Toast

This is fantastic!  When my girls were growing up, they always wanted me to make this for their friends whenever they had a sleepover at our house.  I love to serve this for a weekend breakfast or a special holiday brunch.

 

Vickie's Pineapple Cream French Toast
 
Recipe type: Breakfast, Brunch
Ingredients
  • 6 thick slices of French bread
  • 3 eggs
  • ¾ cup half and half cream
  • 8 oz crushed pineapple, including the juice
  • ½ cup dark brown sugar
  • ½ cup butter, melted
  • Powdered sugar and maple syrup for serving
Instructions
  1. In a small bowl, whisk the eggs, half and half, crushed pineapple with juice and the dark brown sugar.
  2. Slice bread with a serrated knife and place bread slices in a single layer in an oblong baking dish.
  3. Pour the egg mixture over the bread. Cover with plastic wrap and refrigerate overnight.
  4. At serving time, melt 2 tablespoons of butter on a griddle. Add bread slices and cook over medium heat until golden brown on each side. ( You may need to add additional butter as the French toast cooks.
  5. Sprinkle with powdered sugar. Serve with maple syrup.

Slice bread into thick slices using a serrated knife and place bread slices in a single layer in an oblong baking dish.

Pour the egg mixture over the bread slices.  Cover with plastic wrap and refrigerate overnight.

At serving time, melt 2 Tablespoons of butter on the griddle. ( You may need to add more butter as the french toast cooks.)  Add bread slices and cook over medium heat until golden brown on each side.

Sprinkle with powdered sugar.  Serve with butter and maple syrup.
