Gobs of Chocolate is just one of the many yummy chocolate desserts you can make in the crock pot!  I remember all of the great chocolate desserts my grandma used to make…and the wonderful smells that came out of the kitchen when she was cooking.  This recipe takes me back to her kitchen when I smell this gooey chocolate dessert cooking in the crock pot.  And…the best part is the crock pot does all of the work!  It cooks in only 2 hours on High so it’s also a great recipe for entertaining.  I made this last week and there wasn’t even a bite leftover!  Serve it with vanilla ice cream and get set for some WOWS!

Ingredients
  • 1 box Betty Crocker fudge brownie mix
  • ½ cup butter melted
  • 4 eggs
  • 1 pouch Betty Crocker chocolate chip cookie mix
  • Vanilla ice cream, for serving
Instructions
  1. Spray a 4½ quart crock pot with cooking spray and lightly dust with flour.
  2. In a large bowl, mix the brownie mix with ¼ cup melted butter and 2 of the eggs.
  3. In another large bowl, mix the chocolate chip cookie mix, remaining ¼ cup melted butter and remaining 2 eggs.
  4. Drop alternate spoonfuls of the brownie mix and chocolate chip cookie batters into the crock pot.
  5. Cover and cook on high for 2 hours or until cake is set in the center.
  6. To serve, spoon cake out of the crock pot and top with big scoops of vanilla ice cream.

Mix the remaining 2 eggs, remaining 1/4 cup butter, melted and the chocolate chip cookie pouch.

Drop spoonfuls of both batters alternately into the crock pot.

Cook on High for 2 hours.  Cake batter should just be set on top.  Serve by spooning the Gobs of Chocolate dessert out of the crock pot and top with big scoops of vanilla ice cream.

How to Make a Pineapple Boat

A Pineapple Boat is a creative and easy way to serve fruit salads , chicken salads or fruit dips!

Add some tropical flair to your next brunch, lunch or party by serving your salads or fruit dips in a cute pineapple boat!  It is quick and easy to make a pineapple boat and the fresh pineapple you remove will go right into your fruit salad!

  • Start with a fresh pineapple that has an attractive top.  The leaf top will be a part of the pineapple boat and you want to choose a pineapple that looks fresh.  Buy a pineapple that has a light pineapple scent with a firm skin.  An overpowering pineapple scent or a skin that indents easily indicates a pineapple that is overripe.
  • You will need two knives.  You will need a large knife to cut the pineapple in half and a smaller knife to remove the inside of the pineapple.

Place the pineapple on a cutting mat and turn it to find the most attractive and stable way for it to sit.  Remember, you don’t want the pineapple boat to roll over once it if filled with a salad or fruit dip!

Ingredients
  • 8.5 oz box Jiffy corn muffin mix
  • ½ cup flour
  • ½ cup milk
  • 1 egg
  • ½ stick butter, melted
  • 1 cup corn
  • ½ cup chopped green onions
  • Vegetable oil for frying
  • Honey for serving
Instructions
  1. Whisk together the corn muffin mix and flour in a bowl.
  2. Whisk the ½ cup milk, 1 egg and ½ stick melted butter in another bowl. Stir this mixture into the corn muffin mix and flour.
  3. Stir in 1 cup of corn and ½ cup chopped green onions.
  4. Drop by tablespoonfuls into 2 inches of 365 degree vegetable oil and fry until golden brown, about 3 minutes.
  5. Serve drizzled with honey for a real Southern treat!

Southern Corn Fritters are so easy to mix up!  Just combine the corn muffin mix and the flour in one bowl.  Then combine the milk, egg and melted butter in another bowl.  Add the liquid mixture to the dry mixture and stir.  Stir in the corn and chopped green onions.

Give it an easy stir to combine and you are ready to start frying these tasty morsels up!

Heat the oil to 365 degrees.  I use a candy/frying thermometer to make sure the oil stays at the right temperature.  

Drop the batter by rounded tablespoons into the hot oil and fry until golden brown, about 3 minutes.  Drain on paper towels.

Throwing a 4th of July BBQ is easy with these great tips from my friend Sara Stringer with sarasblogging.  

Thank you Sara for this guest post.  You have given us a lot of terrific success secrets for our 4th of July BBQ!

It’s summer and you know what that means: chilling in the backyard on the weekends, having the whole neighborhood over for barbecue, grilling and picnic fare. Understandably you want these get-togethers to be perfect. Here are some tips to help you get as close to perfection as possible.

Stray from the Norm

Obviously you’re probably going to want to do burgers, hot dogs, maybe some chicken.  But what about varying the menu a little bit?

Shish Kabobs are usually a big crowd pleaser—and easy to make vegetarian for the vegetarians and vegans in your midst.

Make your own fruit salad. Anybody can dump a few cans of fruit cocktail into a bowl. Instead, why not try the following recipe:

You’ll need:

A bunch of your favorite fruit: grapes, strawberries, apples, whatever.

Lemon juice – one lemon’s worth

Lemon zest—one lemon’s worth

1/3 cups of very light corn syrup

What You Do:

Cut up the fruit into manageable sized bites. Make sure that the skins, rinds and peels are removed. Toss the fruit chunks into a big bowl. Aim to have at least six cups worth of cut up fruit.

In a smaller bowl combine your lemon zest, lemon juice and corn syrup and mix thoroughly.

Pour the glaze over the fruit and toss until everything is coated equally.

The great thing about this recipe is that it is easy to adjust depending on the size of your party or gathering. Less for fewer people, more for more. You can also adjust it according to taste to make it more “lemony” or less.

Simple is Best

Decorating for an outdoor event presents a unique set of challenges. It’s easy to go overboard, trying to make things festive. The truth is that, with backyard barbecues and neighborhood block parties, less is very often more.

Tables: instead of paper, go for vinyl (or easily wipe-offable) table cloths—but don’t buy them pre-made! It’s super easy to make your own. Simply take a trip to your local fabric shop and see what they have in stock (it’s helpful to have some coupons for JoAnn’s in your pocket before you get to the store). You can buy a few yards of fabric and cut them and hem them up to fit the tables you’ve got on hand. Then, after the party simply wipe them off, fold them up and store them until the next get together.

Centerpieces: Find some large (widely mouthed) glass vases. Fill them up a third of the way with sand. Place tall fat candles (white looks the most elegant) in the sand.  The weight of the sand will help the candle stay “anchored” and will keep the vases from toppling over. The vases, in turn will keep tablecloths from blowing away. The flame from the candles will be safe within the vase but the smoke drifting out will help keep bugs away from peoples’ food.

Clean Up

At the end of the summer, go through all of your supplies. The great thing about what we’ve talked about here is that everything is affordable. If you have to toss it out due to wear and tear, you won’t mind very much and you can easily (and cheaply) replace it all next year.

The one exception is the grill. Look at your grill when grilling season is over. If it looks like it’s getting worn down, you can use the following fall and winter season to scour the internet looking for sales or an online Black Friday deal to help you replace it before the next season starts.  Waiting until next summer only guarantees an expensive purchase.

Fruit trays are a great way to entertain because they can be made ahead of time and and this Pineapple Palm Tree really adds some tropical whimsy to your party!  Check out my Video Tutorial on making this Pineapple Palm Tree:

This fruit tray has the pineapple from the cored pineapples I used for the Palm Tree, fresh strawberries, blueberries. and watermelon. You can use a cookie cutter to cut the watermelon into festive shapes.  I used a heart shaped cookie cutter for this fruit tray.  If you are cutting the watermelon into shapes, just cut any remaining watermelon into cubes and place at the back of the fruit tray.  Other great choices for fruit trays are honeydew melons, cantaloupes, white and red seedless grapes, and  sliced apples ( that have been dipped in orange juice).

Your guests will be amazed that you made this yourself!  And…no one has to know how simple this is to make!  Whether you are on a budget or host a grand extravaganza, these pineapple palm tree centerpiece ideas will be a big hit!  You can make one as I have done here, or make several and group together on a large table.  

It is so easy to make a Pineapple Palm Tree..just follow my step by step directions.  You can also watch my video “Pineapple Palm Tree Centerpiece Ideas”.


Start by selecting four pineapples and cut the tops and bottoms off of them.  You will discard all of these pieces EXCEPT one of the tops.  This will be the top of the Pineapple Palm Tree so cut this top off about 1/4 of the way down on the pineapple so you have some extra pineapple for support.

Place the bottom pineapple for the base on your tray.  This pineapple will NOT be cored.  Try to cut the pineapples very straight so that they will sit upright and not lean or topple over.

The next three pineapples will be cored.  Insert a knife into each pineapple by going from the top down to the bottom and cut around the inside and remove it. ( You will cut the usable part of the pineapple into chunks and put it on your fruit tray.  Only the hard inside core has to be discarded)

Now you will begin to stack the pineapples.  The pineapple that was not cored will be on the bottom.  You will use wooden skewers to secure the stacked pineapples.

 I inserted   5   12″ skewers into the bottom pineapple.   Stack the second pineapple on to of the bottom pineapple base, making sure the skewers secure into the top pineapple.

Next, insert at least 4 of the 9 inch skewers into the second pineapple, leaving each skewer sticking halfway out.  Now position the third pineapple over the skewers and push it down on top of the second pineapple.  Continue by adding the fourth pineapple to the stack.  Insert skewers into the top pineapple and attach the top with the pineapple leaves on it.  

Palm leaves ( I ordered these from my local florist for about $1 per leaf ) are the perfect finishing touch for the palm tree.  The palm leaves can just be pushed into the top of the pineapple leaves.  However, if your Pineapple Palm Tree is going to be  displayed for several hours, you may want to use your hot glue gun and put a small amount of hot glue onto each palm leaf tip before you insert it into the top.  I also like to poke two or three holes into the top of the pineapple and insert palm leaves that will be sticking out from the palm tree.  This gives it a more realistic look when all of the palm leaves are not going straight up from the top.

The Pineapple Palm Tree is very stable when you make it this way.  In fact, it takes a little bit of effort to disassemble it!

Whip up Vickies EASY Cream Cheese Icing for your next cake!

This is the perfect cream cheese icing!  It’s the recipe my Mom used to make.  She used it on her Red Velvet Cake, on pumpkin bread, chocolate cupcakes and more.

Be sure to use the Philadelphia Cream Cheese – regular, not fat-free.  This is important.  Some things can’t be skimped on and this is one of them in my opinion.  

Here are some of my Success Secrets for making the perfect cream cheese icing:

  • The cream cheese should be cold.  If there is any liquid in the package, drain it off.
  • The butter should be softened and at room temperature.
  •  Beat the butter with a mixer until it is super soft.  if you don’t beat it until it is creamy, you will have bits of butter clumps in your icing and you don’t want that.
  • Add the cream cheese and beat until combined – but don’t over beat.  Less is best.  Cream cheese will release liquid the more you beat it and the icing will be too runny.

  • ½ cup butter, softened
  • 2 cups sifted confectioner's sugar (powdered sugar)
  • 1 teaspoon vanilla extract
Instructions
  1. In a medium bowl, beat the butter with a mixer until creamy. Add the cream cheese and beat until combined. Mix in the powdered sugar and vanilla.

Now you should have a perfectly spreadable cream cheese icing.

Use to frost your cake or cupcakes.

One final note:    If you have happened to over beat the icing and it is too thin or runny, just pop it in the fridge for 30 minutes or so and it should firm up again.

Give this lovely spinach salad a quick toss and you are ready to enjoy this delicious any-time salad!

This bright and beautiful spinach salad combines baby spinach, mandarin oranges, chopped red onions, Gorgonzola cheese and nuts to make a delicious feast for your eyes and your palate.  Top it off with a creamy raspberry dressing and you have one delicious  salad!  This is not what I consider to be the traditional spinach salad recipe.  I’ll be sharing my traditional recipe in another post.  That recipe features spinach along with hard boiled eggs and crumbled bacon with a homemade dressing on top.  But this variation is certainly delicious.  It’s a beautiful and colorful salad too.  You can enjoy this salad any time of the year because all of the ingredients are available year around.  

The ingredients are simple:

  • Baby Spinach
  • Canned Mandarin Oranges ( drained)
  • Chopped Red Onion
  • 1 Container Gorgonzola Cheese
  • Walnuts
  • Creamy Raspberry Dressing (purchased)

Now for a word about the Gorgonzola cheese.  I don’t normally like Gorgonzola cheese or Blue cheese.  However, I find that the raspberry dressing and the mandarin oranges really complement the Gorgonzola cheese and it has a very mild flavor in this recipe.  I would recommend trying it with the Gorgonzola cheese and see what you think.  You could also  substitute crumbled feta or goat cheese .

Mediterranean Appetizer Platter

Bring some exotic flavor to the table with my Mediterranean Appetizer Platter!

Enjoy a Mediterranean Appetizer Platter either as an appetizer or a meal in itself!  I’ve recently featured my Hummus Recipe, Oven Roasted Garlic and Toasted Pita Bread Triangles and they are all a part of this delicious and flavor-fully exotic  appetizer tray.  The beauty of this appetizer tray is that you can vary the items with a little bit of this and a little bit of that.  If you have time, make my Hummus Recipe a few hours or days ahead of time and just have it ready to go in the refrigerator.  However, if you don’t have 15 extra minutes to make the hummus, most grocery stores carry pre-made hummus.  The oven roasted garlic is optional but it really adds a great flavor to the party platter.  The oven roasted garlic takes 45 minutes in the oven and you can roast it while you are assembling the rest of the ingredients.  The rest of the ingredients are purchased at the grocery store.  

We enjoyed a Mediterranean Appetizer Platter at one of our favorite restaurants about a year ago.  Bruce and I had never had hummus before then and once we tasted the wonderful combination of flavors on the platter…I knew I had to recreate it at home.  There are a lot of variations of hummus and my recipe is fairly basic.  Hummus has been around for thousands of years and is a healthy snack.

 My Mediterranean Platter included:

  • Homemade Hummus
  • A block of feta cheese that I cut into cubes
  • Oven roasted garlic
  • Marinated artichoke hearts
  • Kalamata olives ( with or without the pit) and
  • Roasted red peppers cut into slices.

I served the Mediterranean Appetizer Platter with toasted pita bread.  

Other options for the platter would include:

  • Cherry or grape tomatoes
  • English cucumber ( this is a seedless cucumber), cut into slices
  • Grape leaves ( packed in brine) These are found in the pickle section or International section of the grocery store.  Drain them and pat them dry.  Wrap one grape leaf around each chunk of feta cheese.

 

This Mediterranean Appetizer Platter can also be assembled ahead of time.  I like the oven roasted garlic and the pita bread to be served warm so I would bake those and add at the last minute.

Ingredients
  • 1 cup hummus
  • Assorted Mediterranean olives OR Kalamata olives ( with or without the pit)
  • Feta cheese, cubed
  • Roasted garlic
  • Sliced roasted red peppers ( from a jar)
  • Marinated artichoke hearts
  • Other options: cherry or grape tomatoes, sliced English (seedless) cucumber, and pickled grape leaves
Instructions
  1. Arrange the ingredients on a platter and serve with Toasted Pita Bread Triangles
  2. Enjoy!
