Crock Pot Spaghetti

This Crock Pot Spaghetti recipe is so easy – don’t wait long to make it!  The spaghetti sauce cooks all day in the crock pot and when  you get home, you’ll be greeted  by the wonderful aroma of homemade goodness!  The best part is –  you add the dry spaghetti the last 30 minutes and it cooks to perfection in the sauce.  No extra pans to wash!  This recipe makes a lot and we always look forward to leftovers.  


Crock Pot Spaghetti
 
Recipe type: Pasta
Ingredients
  • 2 pounds ground chuck, browned and drained
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 29 ounces tomato sauce
  • 3 teaspoons Italian seasoning
  • 1½ teaspoons salt
  • ¼ teaspoon pepper
  • 8 ounce can sliced mushrooms, drained
  • 6 cups tomato juice
  • 16 ounce package thin spaghetti - broken in half
  • Grated Parmesan cheese ( optional for serving )
Instructions
  1. Combine all ingredients except the dry spaghetti and the cheese in a 6 quart slow cooker.
  2. Cover and cook on LOW 6 to 8 hours or HIGH 3 to 5 hours.
  3. Turn to HIGH during the last 30 minutes and stir in the dry spaghetti.
  4. Note: If you use anything other than thin spaghetti, you may need to continue cooking another 10 minutes.

Italian Roasted Fingerling Potatoes Recipe

Here is an easy fingerling potatoes recipe that’s sure to impress your guests!  You can have this fingerling potatoes recipe in the oven in 5 minutes…What could be easier?

 

 

Italian Roasted Fingerling Potatoes with Herbs

Serves: 2
Ingredients
  • 1 pound fingerling potatoes
  • 1 tablespoon Herbs de Provence, plus extra for garnish
  • 3 cloves garlic, minced
  • ¼ cup extra virgin olive oil, plus extra for drizzling
  • Salt and pepper
Instructions
  1. Put the potatoes in a large bowl. In a small bowl, whisk together the herbs, garlic and oil until blended and then pour over the potatoes.
  2. Sprinkle generously with salt and pepper and toss to coat. Transfer the potatoes to a large baking dish, spacing them evenly apart.
  3. Roast the potatoes until they are tender and golden, about an hour, turning them occasionally while roasting.
  4. Transfer the roasted potatoes to a platter and drizzle with extra virgin olive oil and sprinkle with additional Herbs de Provence, if desired.

Recipe type: Main Dish - Fish
Serves: 3 to 4
Ingredients
  • 1 pound white fish fillets, thawed
  • 4 tablespoons melted butter
  • 2 green onions, sliced
  • 8 ounce package fresh mushroom slices
  • 1 can Cream of Celery soup
  • ½ teaspoon Italian Seasoning
  • ½ cup Italian style or plain breadcrumbs
Instructions
  1. Arrange fish in a 12 X 8 X 2 oblong baking dish.
  2. Top with 2 tablespoons of the melted butter, onions, mushrooms, soup and seasonings.
  3. Cover with plastic wrap. Microwave on HIGH for 10 minutes.
  4. Mix remaining melted butter into the breadcrumbs and sprinkle over the fish.

Ingredients:

1 pound of white fish fillets, thawed

4 tablespoons of melted butter

2 green onions, sliced

8 oz package of fresh sliced mushrooms

1 can Cream of Celery soup

1/2 teaspoon Italian Seasoning

1/2 Italian or plain breadcrumbs

Directions:

Arrange the fish fillets in a 12 X 8 X 2 baking dish.

 

Top with butter, onions, mushrooms, soup and seasonings.

 

Cover with plastic wrap.  Microwave on HIGH for 10 minutes.

 

Top with buttered breadcrumbs and serve.

  • 9 inch deep dish frozen pie shell
  • ½ pound ground beef
  • ½ cup real mayonnaise
  • ½ cup milk
  • 2 eggs, beaten
  • 1 tablespoon cornstarch
  • ¼ cup chopped green pepper
  • ¼ cup chopped green onion
  • 1½ cups shredded cheddar or Swiss cheese
  • Salt and pepper
Instructions
  1. Brown the ground beef and drain.
  2. Mix mayonnaise, milk, cornstarch and eggs.
  3. Stir in meat, cheese, onion and pepper.
  4. Pour into unbaked frozen deep dish pie shell. Place on a cookie sheet and bake at 350 degrees for 35 to 45 minutes or until center is set.

Ingredients:

  • 2 tablespoons cinnamon
  • 1 cup sugar
  • ½ cup butter, melted
  • 1 8 oz tube refrigerated biscuits ( not flaky kind)
Instructions
  1. Mix the cinnamon and sugar together in a medium bowl. Place the melted butter in a separate bowl.
  2. Separate the biscuits. Dip each biscuit into butter, then into cinnamon and sugar mixture.
  3. Place on an ungreased cookie sheet.
  4. Bake at 375 degrees for 12 to 15 minutes, until golden.
  5. Makes 10 Cinnamon Doughnut Puffs

This is a great dessert to make while fresh strawberries are still available.  Its is so quick and easy to make!

Ingredients
  • 1 quart whole strawberries
  • ½ cup confectioners sugar ( powdered sugar)
  • 1 cup water
  • 1 cup sugar
  • Dash of salt
  • 3 tablespoons cornstarch
  • 3 tablespoons strawberry Jello powder
  • Graham cracker pie crust or baked pie shell
  • Homemade whipped cream
Instructions
  1. Wash and hull 1 quart of strawberries. Add ½ cup confectioners (powdered) sugar. Set aside.
  2. Put 1 cup of water, 1 cup of sugar, dash of salt and 3 tablespoons of cornstarch in a saucepan and boil until thick and clear.

Bourbon Pork Tenderloin Recipe with Mustard Sauce

Bourbon Pork Tenderloin

 

Bourbon Pork Tenderloin with Mustard Sauce
 
Marinating meat is so easy to do and it really gives a big flavor boost! I use Kentucky Bourbon in this marinade for a real taste of the South!
Recipe type: Entree
Ingredients
  • ¼ cup soy sauce
  • ¼ cup Bourbon
  • 2 tablespoons dark brown sugar
  • 2 (1 pound each ) pork tenderloins
  • ⅔ cup sour cream
  • ⅔ cup mayonnaise
  • 2 tablespoons dry mustard
  • 4 green onions, finely chopped
Instructions
  1. Combine the bourbon, soy sauce and dark brown sugar in a glass mixing bowl and stir to combine.
  2. Pour into a large zip lock bag. Add tenderloins and seal. Refrigerate at least 2 hours, turning the meat occasionally.
  3. Remove from the marinade and discard the leftover marinade. Place on a rack in a shallow roasting pan. Bake at 325 degrees for 55 to 65 minutes. ( I like to cook pork until it reaches 160 to 165 degrees on an instant read thermometer)
  4. While the tenderloins bake, prepare the Mustard Sauce. ( Or prepare it a day ahead so the flavors can develop) Note: The flavor is pretty intense, so if you want to tone it down a bit, just use less dry mustard. I love the flavor of this sauce, so I make the recipe exactly as I have given it here.
  5. Combine ⅔ cup sour cream, ⅔ cup mayonnaise, 2 tablespoons dry mustard and 4 chopped green onion. Cover and chill.
  6. When ready to serve, slice the tenderloins and serve with the mustard sauce.

Marinating the tenderloins:

Remember to always marinate meat in the refrigerator – never at room temperature.Don’t use a metal container – always use either glass or plastic.  I like the large zip lock bags the best.    Also, always discard the remaining marinade after use.  Marinating meat like this helps ensure you get a nice juicy result.

After marinating, place the tenderloins on a rack in a shallow roasting pan and bake.

Preparing the Mustard Sauce for Meat:

When ready to serve, slice the tenderloins and serve with the mustard sauce.

Bourbon Pork Tenderloin is a real taste of the South!

Homemade Whipped Cream

I like to use Homemade Whipped Cream on my Mounds Chocolate Brownie Pie and my Date Pudding.  I also keep it on hand for my ABC Coffee.  It’s easy to make and really ramps up a dessert!  You can half the ingredients if you need a smaller amount of whipped cream.


Homemade Whipped Cream
 
Recipe type: Dessert
Ingredients
  • 16 oz Heavy Cream (Whipping cream)
  • ½ cup sugar
Instructions
  1. Chill mixing bowl and beaters in the freezer for about 30 minutes.
  2. Whip 16 oz of whipping cream until soft peaks form.
  3. Slowly add ½ cup sugar and continue beating until stiff peaks form.

Chill mixing bowl and beaters in the freezer for about 30 minutes.  Whip 16 ounces of whipping cream until soft peaks form.

Add 1/2 cup of sugar and continue whipping until stiff peaks form.

Disappearing Ice Cream Dessert

Wow! The hot weather is here and I decided it was time for a quick, cool ice cream dessert.  This is a great summertime dessert to have on hand in your freezer.  Everyone loves it and no one will ever guess how simple this is to make.  You can have this ready for the freezer in 5 minutes!  I like to make this and have on hand for unexpected guests.  We named this the Disappearing Ice Cream Dessert because when I make this and put it in the freezer — it just seems to disappear!


Disappearing Ice Cream Dessert
 
Recipe type: Dessert
Ingredients
  • 12 ice cream sandwiches
  • 1 tub Cool Whip, thawed
  • 3 large Butterfinger candy bars, crushed
Instructions
  1. Line the bottom of a 9 X 13 glass dish with ice cream sandwiches.
  2. Spread whipped topping thickly and evenly over the ice cream sandwiches.
  3. Place candy bars in a zip lock bag and pound with a mallot to crush. Sprinkle the Butterfinger crumbs over the top.
  4. Cover with plastic wrap and then with aluminum foil and freeze until ready to serve.

Line the bottom of a 9 X 13 dish with ice cream sandwiches.

Spread Cool Whip  thickly and evenly over the ice cream sandwiches.

Place the candy bars in a large zip lock bag and pound with a mallot to crush.  Sprinkle the Butterfinger crumbs over the top.

Cover with plastic wrap and then with aluminum foil and freeze until ready to serve.
