Sinful Hot Fudge Sauce Recipe

Here is an almost instant hot fudge sauce recipe that’s homemade!  Try it over ice cream or pound cake for a super simple chocolate treat!

Ingredients
  • 8 ounces of semisweet chocolate squares
  • 14 ounces sweetened condensed milk
  • 2 teaspoons vanilla extract
  • ¼ teaspoon sea salt
Instructions
  1. Cut chocolate into chunks. Place in a microwave-safe bowl.
  2. Add sweetened condensed milk and mix well.
  3. Microwave on high for 3 minutes to soften the chocolate.
  4. Stir mixture with a wooden spoon until the chocolate is melted. Stir in vanilla extract and sea salt.
  5. Serve hot.

This Sinful Hot Fudge Sauce recipe is delicious served over ice cream or pound cake! This only three main ingredients it is so easy to make!

Ingredients:

8 ounces semi sweet chocolate squares

14 ounces sweetened condensed milk

2 teaspoons vanilla extract

1/4 teaspoon sea salt

Directions:

Cut the chocolate into chunks. Place in a microwave safe bowl.

Add the sweetened condensed milk and stir well.

 

Microwave for 2 to 3 minutes on high.  Remove from the microwave and stir to mix.  Serve hot.

Aloha from Maui

Aloha from the beautiful island of Maui!  I arrived at the The Westin Ka’anapali Ocean Resort Villas late last night after a long day ( 14 1/2 hours) of traveling.   Yesterday included two layovers and one lost piece of luggage but I arrived ready to enjoy the peace and beauty of this wonderful island.   

My morning began at 5:30 A.M. with a stunning 2 hour walk on the beach complete with the surprise viewing of two different rainbows..  

This was a gentle reminder that life is full of promise and where there is love….there is hope.

The black rocks on the beach will be my new collection…( I remember the movie “Something’s Gotta Give” )….

Then came my stop at Ocean’s Grill for breakfast.  The breakfast buffet came complete with Egg’s Benedict ( my favorite) and I added a Mimosa!!!  Next week I plan on featuring my recipe for Eggs Benedict for a Crowd that is EASY, EASY, EASY…and so good!  I’ll also feature a recipe for Mimosa’s and show you how to set up a Mimosa Bar for parties or brunch buffets.

Mom’s Recipe Box

Family recipes that have been passed down from generation to generation are what Make Life Special is all about.  I want to inspire you to cook with recipes that are easy to make, fast and delicious.  Some of my Mom’s recipes are pictured below.    

My Mom and Dad have moved into Supportive Living and my Mom is no longer able to cook.  This has been a major change in all of our lives, but it has been positive for Mom and Dad….How lucky I am to still have them in my life!  Dad is 89 years old  and Mom is 82 years old.  Mom gave me her two recipe boxes filled with all of the recipes she has collected over the years.  I can’t wait to start cooking and sharing these recipes….

 

Fabulous Fish

Looking for some really quick and easy fish recipes?  This recipe delivers!


Can you believe it?  This fish microwaves in 10 minutes!  It’s shown here with my Roasted Fingerling Potatoes and Roasted Asparagus.  

 

 

Fabulous Fish
 
Recipe type: Main Dish - Fish
Serves: 3 to 4
Ingredients
  • 1 pound white fish fillets, thawed
  • 4 tablespoons melted butter
  • 2 green onions, sliced
  • 8 ounce package fresh mushroom slices
  • 1 can Cream of Celery soup
  • ½ teaspoon Italian Seasoning
  • ½ cup Italian style or plain breadcrumbs
Instructions
  1. Arrange fish in a 12 X 8 X 2 oblong baking dish.
  2. Top with 2 tablespoons of the melted butter, onions, mushrooms, soup and seasonings.
  3. Cover with plastic wrap. Microwave on HIGH for 10 minutes.
  4. Mix remaining melted butter into the breadcrumbs and sprinkle over the fish.

Ingredients:

1 pound of white fish fillets, thawed

4 tablespoons of melted butter

2 green onions, sliced

8 oz package of fresh sliced mushrooms

1 can Cream of Celery soup

1/2 teaspoon Italian Seasoning

1/2 Italian or plain breadcrumbs

Directions:

Arrange the fish fillets in a 12 X 8 X 2 baking dish.

 

Top with butter, onions, mushrooms, soup and seasonings.

 

Cover with plastic wrap.  Microwave on HIGH for 10 minutes.

 

Top with buttered breadcrumbs and serve.

Hamburger Quiche

You can have this ready for the oven in about 10 minutes and it bakes in 35 to 45 minutes.  I use a frozen deep dish pie crust for convenience.  Your family is going to love this!  You may want to make two and freeze one for later.  Enjoy!

Ingredients

  • ½ pound ground beef
  • ½ cup real mayonnaise
  • ½ cup milk
  • 2 eggs, beaten
  • 1 tablespoon cornstarch
  • ¼ cup chopped green pepper
  • ¼ cup chopped green onion
  • 1½ cups shredded cheddar or Swiss cheese
  • Salt and pepper
Instructions
  1. Brown the ground beef and drain.
  2. Mix mayonnaise, milk, cornstarch and eggs.
  3. Stir in meat, cheese, onion and pepper.
  4. Pour into unbaked frozen deep dish pie shell. Place on a cookie sheet and bake at 350 degrees for 35 to 45 minutes or until center is set.

Ingredients:

9 inch frozen deep dish pie shell

1/2 pound ground beef

1/2 cup mayonnaise

1/2 cup milk

2 eggs, beaten

1 tablespoon cornstarch

1/4 cup chopped green pepper

1/4 cup chopped green onion

1 1/2 cups shredded cheddar or Swiss cheese

Salt and pepper

 

Brown the ground beef and drain.

Mix mayonnaise, milk, cornstarch and eggs.  Stir in meat, cheese, green onion and green pepper.  Add salt and pepper.

Pour into unbaked pie shell.  Place on a cookie sheet and bake at 350 degrees  for 35 to 45 minutes or until center is set.

Serves 4 to 6

Baked Pork Chops and Corn Stuffing

Sometimes we all just need some comfort food and tonight was the night.  This quick and easy recipe was just the ticket!  Baked Pork Chops and Corn Stuffing makes a delicious family night meal or is great for a casual dinner with friends.

 

Baked Pork Chops and Corn Stuffing

Ingredients
  • 1 can Cream of Celery Soup

Home style goodness in 30 minutes! My Baked Pork Chops and Corn Stuffing is real comfort food that bakes in 30 minutes!

Ingredients:

Bake uncovered at 400 degrees for 30 minutes.

Baked Bacon

I LOVE bacon!!! But, cooking a lot of bacon can be difficult unless you use my Success Secret for Baked Bacon…..

Cooking bacon for a bunch can be a challenge but it is EASY when you make Vickies Baked Bacon.


Preheat the oven to 400 degrees.

Lay a wire rack into a foil lined rimmed cookie or baking sheet.  Lay bacon slices on the rack.  You will be able to cook 10 to 12 slices this way.  If you need to cook more, use two baking sheets.

For a pretty presentation, scrunch bacon slightly to make a ribbon effect.

Bake for 15 to 18 minutes.  Note:  If you are cooking extra thick bacon, you will have to adjust the baking time.

  • Bacon - allow at least 2 slices per person
Instructions
  1. Preheat oven to 400 degrees.
  2. Lay a wire rack into a foil lined pan.
  3. Lay the bacon on top of the wire rack. All of the bacon grease will drain off as the bacon bakes.
  4. Bake for 15 to 18 minutes.

Bacon really seems to round out a breakfast or brunch.  Always allow at least 2 slices of bacon per person.  I think this is the best way to cook bacon because all of the grease drains off into the foil lined pan as the bacon bakes.  Then the clean-up is a breeze.  Just gather up the aluminum foil and throw away.  If you save your bacon grease, you can drain it out of the pan and into your bacon grease container.  Either way…this is super easy!

Who doesn’t love doughnuts?  These little cinnamon and sugar puffs are yummy!!!

Ingredients
  • 2 tablespoons cinnamon
  • 1 cup sugar
  • ½ cup butter, melted
  • 1 8 oz tube refrigerated biscuits ( not flaky kind)
Instructions
  1. Mix the cinnamon and sugar together in a medium bowl. Place the melted butter in a separate bowl.
  2. Separate the biscuits. Dip each biscuit into butter, then into cinnamon and sugar mixture.
  3. Place on an ungreased cookie sheet.
  4. Bake at 375 degrees for 12 to 15 minutes, until golden.
  5. Makes 10 Cinnamon Doughnut Puffs

2 tablespoons cinnamon

1 cup sugar

1/2 cup butter, melted

1   8 oz tube refrigerated biscuits  ( not the flaky kind)
