Think you don’t have time for breakfast?  Well, think again!  Easy Microwave Mug recipes are the solution.  My Omelet In a Mug takes a total of 2 minutes and the combination of 1 whole egg and 2 egg whites will get your morning off to a healthy start.  The Ezekiel Bread toast and orange wedge round out this morning meal.  Microwave mug recipes are perfect for one person and are ready right away.

Here is my 2 minute Microwave Mug Recipe for Omelet In a Mug:

Omelet In a Mug
 
Serves: 1
Ingredients
  • 1 whole large egg and 2 egg whites
  • A splash of milk ( about 1 tablespoon)
  • 2 tablespoons chopped vegetables ( whatever you have on hand -- I used chopped green onion and chopped grape tomatoes)
  • Bacon bits ( optional)
  • Pam cooking spray
Instructions
  1. Spray a large mug with cooking spray.
  2. Break one whole egg and 2 egg whites into the mug.
  3. Add the milk, vegetables and bacon bits. Stir well with a fork.
  4. Microwave on high 45 seconds.
  5. Stir.
  6. Microwave another 45 seconds and serve.

Spray large mug with cooking spray.  Break one whole large egg and 2 egg whites into the mug.  Add vegetables , bacon bits and splash of milk.

Stir with a fork and microwave on high 45 seconds.  Stir again and microwave an additional 45 seconds.

Eggs in Toast Nests

Eggs in Toast Nests are great for breakfast or brunch.  They can be partially made the night before you serve them which is an added bonus.  Better plan on 2 to 3 toast nests per serving because everyone loves these!


Eggs in Toast Nests
 
Recipe type: Breakfast, Brunch
Ingredients
  • 6 slices of bread
  • 1 stick of butter, melted
  • 6 medium size eggs
  • 1 tablespoon butter
  • salt and pepper
  • Note: To make 12, double the ingredients and use a 12 cup muffin tin
Instructions
  1. Step 1: (Can be done the night before you plan to serve these) Trim the crusts off of 6 slices of bread. Brush both sides with melted butter.
  2. Fit into large muffin cups or custard cups. Press down slightly with your fingers so the bread will fit in the cup. Bake at 325 degrees for 15 minutes until lightly toasted.
  3. Step 2: Set the oven temperature to 350 degrees. Break a medium egg into each toast cup. Add salt and pepper and dot with butter. Poke each egg with a fork to break the yolk. Cover lightly with foil and bake at 350 degrees for 18 minutes or until done.
  4. Loosen cups with a fork and serve hot on a platter with bacon or sausage links and garnish with fresh parsley.

6 slices of bread

1 stick of butter, melted

6 medium size eggs

1 tablespoon butter

salt and pepper

Note:  To make 12 Eggs in Toast Nests, double the ingredients and us e a 12 cup muffin tin.

Directions:

Step 1 – I usually do Step 1 the night before I plan on serving the Eggs in Toasts Nests.

Trim the crusts off of 6 slices of bread.  Brush both sides with melted butter.

Fit into large muffin cups or custard cups.  Press down slightly with your fingers so the bread will fit in the cup.  Bake at 325 degrees for 15 minutes until lightly toasted.

If doing step 1 the night before, remove the toast cups from the oven, cool slightly, cover with aluminum foil and continue with Step 2 the next morning.

Step 2:

Set oven temperature to 350 degrees.

Break a medium size egg into each toast cup.

Add salt and pepper and dot with butter.  Poke each egg with a fork to break the yolk.  Cover lightly with foil and bake at 350 degrees for 18 minutes or until done.

Loosen cups with a fork and place on a platter .  Serve hot with bacon or sausage links and garnish with fresh parsley.
