Fresh Green Beans

Fresh green beans are available year around in the produce section of our grocery stores.   Or, you may have an abundance of green beans in your garden.  I remember when I was growing up, my Mom would spend several days canning green beans because we had so many of them.  But, we enjoyed the canned green beans all year long.  

Because they are so readily available, I usually cook them at least once a week   But, if you are a beginning cook…. or one who has always cooked vegetables from the canned goods section or the freezer section…..what do you do with fresh green beans????  Here’s my success secret for fresh cut green beans….

Fresh Green Beans

Rinse the beans thoroughly under cool running water in a colander.  Use kitchen scissors to clip off the ends of each  bean.  Clip the ends in a bowl to discard and put the clipped   beans in another bowl. ( Have you noticed that I use kitchen scissors in almost every meal?  They are such a great time saver for many of the chores we do.)

Every cook needs some easy crock pot recipes for those busy days we all have!  This Crock Pot Green Bean recipe will round out any meal and your crock pot does all of the work!  Not only does the crock pot do all of the work, but this recipe only has 5 main ingredients ( potatoes, fresh green beans, onion, ham cubes and chicken broth) so it’s quick and easy to assemble and economical to make.

We are heading into fresh green bean season which means the grocery store and framers markets will have an abundance of them.  My local grocery store carries fresh green beans all year long so I try to cook fresh green at least once a week.  Easy crock pot recipes like this allow even the busiest person to cook wholesome and nutritious foods.

Serves: 8
  • 8 small red potatoes, scrubbed and halved
  • 16 oz fresh green beans, washed and snapped
  • 1 large onion, cut into eight wedges
  • 16 oz fully cooked ham cubes
  • 32 ounces chicken broth
  • salt and pepper
  1. Add all of the ingredients to the crock pot. Cover and cook on low 8 to 10 hours.
