Onion Roasted Potatoes

Every BUSY cook needs easy potato recipes!  

My recipe for Onion Roasted Potatoes is simple to make!  You just throw together the three ingredients and bake for only 30 minutes!  We are grilling steaks tonight so I’m making Onion Roasted Potatoes as a side dish.  Onion Roasted Potatoes are a snap to make because you don’t even peel the potatoes.  Just diced them up, toss with a little olive oil and a packet of Dried Onion Soup Mix and these are ready for the oven!

Ingredients
  • 4 medium potatoes, diced with the skins left on
  • ¼ cup olive oil
  • 1 packet dry onion soup mix
Instructions
  1. Combine all of the ingredients and pour into a greased casserole dish.
  2. Bake at 350 degrees for 30 minutes

And now for a few nutrition facts about potatoes.  Did you know that one medium potato has only 110 calories?  A medium potato is fat free, sodium free and cholesterol free.  A medium potato has 45% of our daily value for Vitamin C.  In addition to all of that, the skin has lots of good for you fiber. Baking and roasting are healthy ways to cook potatoes.

Potato Smashers for Easy Potato Recipes

Looking for some easy potato recipes?

Potato Smashers are like Potato Skins, covered with crisp bacon and sharp cheddar cheese…but on a grander scale!  You can make these in about 15 minutes and your family and friends will rave!

Ingredients
  • 8 small new red potatoes, about 2 inches in diameter
  • ½ cup water
  • 4 slices bacon
  • 2 tablespoons Zesty Italian Salad Dressing
  • ½ to 1 cup shredded sharp cheddar cheese
Instructions
  1. Place potatoes and water in 2 quart microwavable bowl. Microwave, uncovered, om HIGH for 10 minutes or until potatoes are tender. Let stand a couple of minutes to cool slightly.
  2. Meanwhile, cook bacon in large skillet 8 minutes or so..until crisp, turning frequently. Drain on paper towels, leaving the grease in the skillet.
  3. Drain the potatoes, press each potato with the bottom of a small bowl or saucer to flatten to ½ inch thickness.
  4. Heat Italian dressing in the skillet with the bacon grease. Add potatoes; cook 4 minutes or until bottoms are golden brown.
  5. Meanwhile, crumble bacon. Turn the potatoes over; sprinkle with the cheese and bacon.
  6. Cover skillet with lid and cook an additional 2 minutes or until the cheese is melted.

Place potatoes and water in 2 quart microwavable dish.  Microwave, uncovered on HIGH for 10 minutes…

Microwave Potatoes

Cook the bacon…and save the grease!  You are going to brown the cooked potatoes in that grease in a few minutes!

Drain the potatoes and “smash” each one with the bottom of a small bowl or saucer..

Heat the dressing in a large skillet with the bacon grease..add the potatoes.

Use kitchen scissors to crumble the crisp bacon.

Cook the potatoes 4  minutes or until the bottoms are golden brown.  Turn the potatoes over.

Flip Potato Smashers

 

Top with bacon and cheese.

Italian Roasted Fingerling Potatoes Recipe

Here is an easy fingerling potatoes recipe that’s sure to impress your guests!  You can have this fingerling potatoes recipe in the oven in 5 minutes…What could be easier?

 

 

Italian Roasted Fingerling Potatoes with Herbs
 
Recipe type: Side Dish
Serves: 2
Ingredients
  • 1 pound fingerling potatoes
  • 1 tablespoon Herbs de Provence, plus extra for garnish
  • 3 cloves garlic, minced
  • ¼ cup extra virgin olive oil, plus extra for drizzling
  • Salt and pepper
Instructions
  1. Put the potatoes in a large bowl. In a small bowl, whisk together the herbs, garlic and oil until blended and then pour over the potatoes.
  2. Sprinkle generously with salt and pepper and toss to coat. Transfer the potatoes to a large baking dish, spacing them evenly apart.
  3. Roast the potatoes until they are tender and golden, about an hour, turning them occasionally while roasting.
  4. Transfer the roasted potatoes to a platter and drizzle with extra virgin olive oil and sprinkle with additional Herbs de Provence, if desired.
