Onion Roasted Potatoes

Every BUSY cook needs easy potato recipes!  

My recipe for Onion Roasted Potatoes is simple to make!  You just throw together the three ingredients and bake for only 30 minutes!  We are grilling steaks tonight so I’m making Onion Roasted Potatoes as a side dish.  Onion Roasted Potatoes are a snap to make because you don’t even peel the potatoes.  Just diced them up, toss with a little olive oil and a packet of Dried Onion Soup Mix and these are ready for the oven!

Ingredients
  • 4 medium potatoes, diced with the skins left on
  • ¼ cup olive oil
  • 1 packet dry onion soup mix
Instructions
  1. Combine all of the ingredients and pour into a greased casserole dish.
  2. Bake at 350 degrees for 30 minutes

Baking and roasting are healthy ways to cook potatoes.

Potato Smashers for Easy Potato Recipes

Looking for some easy potato recipes?

Potato Smashers are like Potato Skins, covered with crisp bacon and sharp cheddar cheese…but on a grander scale!  You can make these in about 15 minutes and your family and friends will rave!

Ingredients
  • 8 small new red potatoes, about 2 inches in diameter
  • ½ cup water
  • 4 slices bacon
  • 2 tablespoons Zesty Italian Salad Dressing
  • ½ to 1 cup shredded sharp cheddar cheese
Instructions
  1. Place potatoes and water in 2 quart microwavable bowl. Microwave, uncovered, om HIGH for 10 minutes or until potatoes are tender. Let stand a couple of minutes to cool slightly.
  2. Meanwhile, cook bacon in large skillet 8 minutes or so..until crisp, turning frequently. Drain on paper towels, leaving the grease in the skillet.
  3. Drain the potatoes, press each potato with the bottom of a small bowl or saucer to flatten to ½ inch thickness.
  4. Heat Italian dressing in the skillet with the bacon grease. Add potatoes; cook 4 minutes or until bottoms are golden brown.
  5. Meanwhile, crumble bacon. Turn the potatoes over; sprinkle with the cheese and bacon.
  6. Cover skillet with lid and cook an additional 2 minutes or until the cheese is melted.

Potato Smashers Ingredients 

Place potatoes and water in 2 quart microwavable dish.  Microwave, uncovered on HIGH for 10 minutes…

Microwave Potatoes

Cook the bacon…and save the grease!  You are going to brown the cooked potatoes in that grease in a few minutes!

Drain the potatoes and “smash” each one with the bottom of a small bowl or saucer..

Heat the dressing in a large skillet with the bacon grease..add the potatoes.

Use kitchen scissors to crumble the crisp bacon.

Cook the potatoes 4  minutes or until the bottoms are golden brown.  Turn the potatoes over.

Top with bacon and cheese.

Home Style Hash Brown Casserole

Cheesy and delicious describes this home style hash brown casserole !  I think this is good as a side dish for dinner or breakfast.   This makes a large casserole so sometimes I just divide it in half and freeze half  to bake later.

Ingredients
  • 2 pounds chunk style (or Southern Style) frozen hash brown potatoes, partially thawed
  • 16 ounces sour cream
  • 1 stick of butter, melted
  • 1 can cheddar cheese soup
  • 1 can cream of chicken soup
  • 1 small onion, chopped ( or a handful of dried onion flakes)
Instructions
  1. Mix all of the ingredients together.
  2. Pour into a greased 9 by 13 casserole baking dish.
  3. Bake at 375 degrees for 1 hour.

Ingredients:

16 ounces sour cream

1 stick butter, melted

1 can cheddar cheese soup

1 can cream of chicken soup

1 small onion, chopped  ( or a handful of dried onion flakes )

Perfect Baked Potato Recipe with Baked Potato Bar

Here is a great option for EASY entertaining or just a family dinner… The Perfect Baked Potato Recipe With A Baked Potato Bar!

Baking the perfect baked potato recipe is easy and serving the baked potatoes on with baked potato bar toppings is fun for everyone!    It gets everyone involved by letting them choose all of their toppings.  Over the years I have seen many different ways to bake potatoes….wrap them in foil, don’t wrap them in foil, use a fork to poke holes in them, stick a nail in them and on and on.  I discovered the secret to what I consider “The Perfect Baked Potato” and that is this:  ramp up the oven temperature to 425 degrees and brush the potatoes with oil and sprinkle with sea salt. Bake large potatoes for 1 hour and 15 minutes and you will have the most incredible baked potato you have ever put into your mouth!

The baked potato bar is just as perfect for a cold winter day as it is for a summer BBQ by the pool.  Here I’m showing my set up for the Baked Potato Bar:

Ingredients
  • Large Idaho Baking Potatoes
  • Oil
  • Kosher ( coarse) salt
  • Options for Baked Potato Bar Toppings: Butter, sour cream, bacon crumbles, green onion slices - including tops, pickled jalapeno pepper slices, shredded cheddar cheese, chili - in the Fall and Winter, canned black beans - rinsed and drained, chopped fresh tomatoes, thawed frozen green peas, salsa, nacho cheese sauce, ranch salad dressing, salt and pepper
Instructions
  1. Preheat oven to 425 degrees. This high temperature is the secret to baking perfect baked potatoes.
  2. Line a rimmed cookie sheet with aluminum foil. Scrub the baking potatoes and pat dry. Place on foil lined sheet.
  3. Brush both sides of potatoes with oil and sprinkle both sides with kosher salt.
  4. Bake for 1 hour and 15 minutes ( for the extra large potatoes) or until done. Smaller potaoes will be done in about an hour.
  5. Split and serve with a variety of the options listed above.
  6. At serving time, cut the potatoes lengthwise across the top and squeeze the ends together to open up the potato. Let guests choose their own toppings.
