Spinach Salad with Creamy Raspberry Dressing

Give this lovely spinach salad a quick toss and you are ready to enjoy this delicious any-time salad!

This bright and beautiful spinach salad combines baby spinach, mandarin oranges, chopped red onions, Gorgonzola cheese and nuts to make a delicious feast for your eyes and your palate.  Top it off with a creamy raspberry dressing and you have one delicious  salad!  This is not what I consider to be the traditional spinach salad recipe.  I’ll be sharing my traditional recipe in another post.  That recipe features spinach along with hard boiled eggs and crumbled bacon with a homemade dressing on top.  But this variation is certainly delicious.  It’s a beautiful and colorful salad too.  You can enjoy this salad any time of the year because all of the ingredients are available year around.  

The ingredients are simple:

  • Baby Spinach
  • Canned Mandarin Oranges ( drained)
  • Chopped Red Onion
  • 1 Container Gorgonzola Cheese
  • Walnuts
  • Creamy Raspberry Dressing (purchased)

Now for a word about the Gorgonzola cheese.  I don’t normally like Gorgonzola cheese or Blue cheese.  However, I find that the raspberry dressing and the mandarin oranges really complement the Gorgonzola cheese and it has a very mild flavor in this recipe.  I would recommend trying it with the Gorgonzola cheese and see what you think.  You could also  substitute crumbled feta or goat cheese .

  • 1 bag Baby spinach
  • 1 can Mandarin oranges
  • 1 red onion, chopped
  • 1 container Gorgonzola cheese
  • Walnuts
  • Creamy Raspberry Dressing ( purchased)
Instructions
  1. Toss all of the ingredients and serve.

I like to use a large glass bowl for this salad because it really showcases the bright colors in this salad.

Creamy Chicken Salad

This chicken salad recipe is a great summertime meal!

Here is a delicious chicken salad recipe that’s loaded with fresh chunks of chicken that are quickly sauteed in olive oil and combined with celery,apples and a dreamy…creamy sauce made of low fat sour cream, a little lemon juice and stone ground mustard.  By using the low fat sour cream you will save on some calories and it tastes delicious too. Toss in some walnuts and you have a feast!

If you are short on time, remember that you can always use a rotisserie chicken from your local deli instead of cooking the chicken breasts.  There is nothing wrong with taking advantage of time savers here and there when cooking.

Ingredients
  • 4 boneless skinless chicken breasts ( about 1¼ lbs) , cut into bite sized chunks
  • 1 Tbs Bertolli Extra Light Tasting Olive Oil
  • ¼ cup low fat sour cream
  • 1 Tbs fresh lemon juice
  • 1 teaspoon stone ground mustard
  • 2 apples, cored and cubed in bite-sized pieces
  • 2 ribs of celery, thinly sliced diagonally
  • ½ chopped walnuts
  • 1 tbs. chopped chives
Instructions
  1. Season chicken with salt and pepper. Heat Bertolli Extra Light Tasting Olive Oil in skillet and cook chicken, about 10 minutes or until thoroughly cooked. Cool chicken.
  2. Combine sour cream, mustard and lemon juice in medium bowl. Stir in chicken, apples, celery, walnuts and chives. Serve cold.
  3. Serve, if desired, with crusty Italian bread or over salad greens.
  4. Enjoy!

 I love easy salad recipes!

Salad recipes are a delicious addition to and meal.   Here’s a cute salad recipe idea!  This tomato salad recipe is  so easy to make and would be great for a ladies luncheon or any Spring or Summer gathering.  I filled these tomato tulips with my homemade tuna salad and a purchased Pimiento Cheese Spread.

Ingredients
  • Roma tomatoes
  • tuna salad
  • pimiento salad
  • green onions
Instructions
  1. Cut an X into each tomato, being careful not to cut through the bottom of the tomato.
  2. Gently pull the tomato apart with your fingers to make a flower.
  3. Place the tuna salad and pimiento cheese spread into two zip lock bags. Cut the tip off of one corner to make a piping bag.
  4. Pipe the filling into the tomatoes.
  5. Arrange the filled tomatoes on a plate and place the green onion tops next to the tomatoes to look like the flower stems.

With a sharp knife, cut an X into each roma tomato, but do not cut through the bottom of the tomato.

Gently pull the tomatoes open to allow room, to fill them with the salad mixtures.

Place each salad mixture into a zip lock bag and snip off a small part of one corner.  Pipe the salad mixtures into the tomato tulips.  I made a homemade tuna salad and I purchased a Pimiento Salad.  Other great choices would be chicken salad, ham salad or even bologna salad.

Place the filled tomatoes on a plate and arrange green onion tops to resemble the stems of the flowers. 

Salad recipes also make great appetizers!

If you want to make a Tomato Tulip Salad Appetizer tray, just use the small grape tomatoes and place the filled tomatoes on a tray like a “bouquet”.

  • 2-4 handfuls of Spring Mix Salad
  • 2 handfuls of feta cheese
  • 1 handful of caramelized walnuts
  • 1 tablespoon flaxseed
  • 1 chicken breast, grilled and sliced
  • 2 -4 tablespoons of Cherry Vinaigrette ( store bought)
Instructions
  1. Layer Spring Mix, feta,flaxseed and walnuts.
  2. Top with chicken.
  3. Serve with Cherry Vinaigrette on the side.
  4. Enjoy!

Summer is in full swing and what better time for a main dish salad! I’m making this for lunch – it’s quick and easy and really good!

Ingredients
  • ½ cup chopped onion
  • 1 head lettuce, chopped or torn in pieces
  • 2 tomatoes, cut into wedges
  • 1 avocado, diced
  • 4 oz grated Cheddar cheese
  • 1 pound ground beef
  • 15 oz can Dark red kidney beans, drained
  • 1 teaspoon salt
  • 1 small bag tortilla chips
  • 16 oz Thousand Island dressing
Instructions
  1. Crumble and cook the ground beef in a skillet until done. Add the drained dark red kidney beans and the salt. Simmer 10 minutes. Drain any excess fat and refrigerate until you are ready to assemble the salad.
  2. Toss together the chopped onion, chopped lettuce, tomato wedges, diced avocado and shredded Cheddar cheese. Refrigerate until you are ready to assemble the salad.
  3. Crush small bag of tortilla chips.
  4. At serving time, toss together the meat and bean mixture, the lettuce mixture and the Thousand Island Dressing.
  5. Enjoy!
