We entertain a lot in our home and we often have overnight guests.  I’m always looking for easy breakfast recipes that I can make the night before and this one is terrific!  I set up a breakfast bar where guests can serve themselves.  I usually set out maple syrup, brown sugar, blueberries, strawberries or other toppers and let everyone make their own “special” oatmeal.

This easy recipe for Crock Pot Overnight Oatmeal is great for a breakfast bar. Just set out maple syrup, brown sugar, blueberries, strawberries or other toppers and let everyone make their own “special” oatmeal.

Ingredients
  • 2 cups old fashioned oats
  • 6 cups water
  • cinnamon
  • chopped apples or other fruit
  • 2 tablespoons butter
Instructions
  1. Butter the crock pot. (I sue the 2 quart insert of my crock pot for this recipe)
  2. Add the oats and water.
  3. Stir in the chopped apples.
  4. Sprinkled with cinnamon.
  5. Dot with 2 tablespoons of butter.
  6. Cover and cook on low overnight…..this will be ready in the morning!

I like to add diced apples or dried cranberries when I add the water and oats.  If you want to add blueberries or raisins, add them in the morning…..or set them out as options on your Oatmeal Breakfast Bar Buffet!

This is also a terrific recipe to use once the kids go back to school.  Mornings are always so rushed and this recipe is ready when you are!  Try spooning this into paper cups and the kids can eat this on the run!  It’s a great way to make sure everyone starts their day with a healthy breakfast!

Honey Bunnies

These cute little Honey Bunny Rolls start with a package of Rhodes Warm-N-Serve Soft Dinner Rolls.  Note:    You will have to partially thaw the rolls in order to cut the bunny ears.  

I’m also including a variation for Cinna Bunnies … They would be a great addition to an Easter breakfast or brunch!

Rhodes Heat and Serve Dinner Rolls

Ingredients
  • Rhodes Warm-N-Serve Soft Dinner Rolls
  • ½ cup honey
  • ¼ cup butter
Instructions
  1. Partially thaw dinner rolls.
  2. Using kitchen scissors, cut the bunny ears into the rolls as shown.
  3. Using a wooden skewer, make two eyes in the rolls.
  4. Bake as directed on package at 325 degrees for 12 minutes.
  5. While the rolls are baking, heat the butter and honey in a pan.
  6. When the rolls come out of the oven, brush the Honey Bunnies with the honey and butter mixture.
  7. Enjoy!

  • Rhodes Warm-N-Serve Soft Dinner Rolls
  • 1 cup butter, softened
  • ⅓ cup sweetened condensed milk, chilled
  • ½ teaspoon corn syrup
  • 1 teaspoon cinnamon
Instructions
  1. Partially thaw the dinner rolls.
  2. Using kitchen scissors, cut the bunny ears into each dinner roll.
  3. Using a wooden skewer, make the eyes in each roll.
  4. Bake as directed on package, 12 minutes at 325 degrees.
  5. While the bunny rolls are baking, combine the remaining ingredients in a food processor and blend until smooth.
  6. Brush the cinnamon butter liberally on the hot rolls when they come out of the oven.
  7. Serve additional Cinnamon Butter with the warm rolls.

Looking for breakfast casserole recipes?  I have several breakfast casserole recipes that are assembled  the night before and then baked  in the morning.  However, sometimes I don’t have time the night before to assemble a breakfast casserole and that’s when I whip out my Sunrise Breakfast Casserole recipe!  This savory breakfast has it all- a crescent roll crust, ham, potatoes and eggs.  And best of all,  you assemble it in the morning.  It takes about 5 minutes to have this in the oven and it bakes in a quick 35 to 40 minutes.  This is SO DELICIOUS!  Your family is going to love this!!

Ingredients
  • 1 tube (8 oz) refrigerated crescent rolls
  • 2 8 oz packages diced ham
  • 1 package ( 20 oz) Simply Potatoes O’Brien Hash Brown Potatoes
  • 5 eggs
  • ½ cup milk
  • 2 cups Shredded Cheddar and Monterey Jack Cheese
Instructions
  1. Spray 9 X 13 baking dish with Pam and arrange the crescent rolls in the bottom of the dish.
  2. Top the crescent rolls with the diced ham and the Simply Potatoes.
  3. Beat together the eggs and milk.
  4. Pour over the casserole.
  5. Top with the shredded cheese.
  6. Bake at 375 degrees for 35 to 40 minutes.

Spray the baking dish with Pam and arrange the crescent rolls in the bottom of the dish.

Top the crescent rolls with the diced ham and Simply Potatoes.  I buy the packages of ham that are already diced so that saves me lots of time!

Make your life special by serving this Mimosa Recipe for a leisurely weekend breakfast…or Brunch…or for a Bridal Shower!  I also love to serve these on Mother’s Day for an extra special treat.    With warm weather just around the corner, I’m sure we will find lots of occasions to enjoy this festive drink!  There are several ideas below that will take your Mimosas over the top.  

You can make these wonderful drinks in less than a minute!  How easy is that!  Just remember to use ice-cold Brut (Dry) Champagne for the perfect Mimosas.  Mimosas are traditionally served in  tall champagne flutes.  Be sure to check out my money saving tips on buying champagne flutes and the wine in my Mimosa Recipe Video. I tell the story about a bridal shower I catered and I learned that you can entertain with class for not much cash!  By using my success secrets, the bridal shower was a huge success and everyone enjoyed Mimosas.

Ingredients
  • ½ glass dry champagne
  • ½ glass orange juice
Instructions
  1. Fill champagne flute one half full with champagne.
  2. Fill the rest of the way with orange juice.

Here are some “Make Life Special” extras that will take your Mimosas over the top!

  • Add a splash of Triple Sec to the mimosa
  • Add a whole fresh strawberry ( stem and all) to the flute before adding the champagne and orange juice
  • Cut a slit in a fresh whole strawberry and garnish the rim of the flute with it
  • Rinse and chill champagne flutes in the freezer to frost the glasses 
  • Be sure to use a dry champagne

Think you don’t have time for breakfast?  Well, think again!  My Omelet In a Mug takes a total of 2 minutes and the combination of 1 whole egg and 2 egg whites will get your morning off to a healthy start.  The Ezekiel Bread toast and orange wedge round out this morning meal.

There are many reasons why eating breakfast tops most “Best Nutrition Tips” lists and why they say “Breakfast is the most important meal of the day”.   The benefits include:

  • Weight control (  Eating breakfast helps you to avoid snacking and overeating at other meals.)
  • Clearer thinking ( After 8 to 12 hours without food, the brain needs “energy” to function.)
  • Improved mood
  • Improved concentration at school or work

In addition to all of these great health benefits, eating breakfast as a family is the perfect time to share and talk with your kids!

Here is my 2 minute Omelet In a Mug:

Serves: 1
Ingredients
  • 1 whole large egg and 2 egg whites
  • A splash of milk ( about 1 tablespoon)
  • 2 tablespoons chopped vegetables ( whatever you have on hand — I used chopped green onion and chopped grape tomatoes)
  • Bacon bits ( optional)
  • Pam cooking spray
Instructions
  1. Spray a large mug with cooking spray.
  2. Break one whole egg and 2 egg whites into the mug.
  3. Add the milk, vegetables and bacon bits. Stir well with a fork.
  4. Microwave on high 45 seconds.
  5. Stir.
  6. Microwave another 45 seconds and serve.

A yogurt parfait is great for breakfast or brunch.  This yogurt parfait is also extremely healthy with the addition of ground flax seeds.   Here are the ingredients….

Serves: 1
Ingredients
  • 1 cup Plain Greek Yogurt
  • ½ cup sliced strawberries
  • ½ cup sliced raspberries
  • ½ cup sliced blackberries
  • ½ cup sliced blueberries
  • ½ cup granola
  • 2 tablespoons honey
  • 2 tablespoons Linwoods Ground Flax, Cocoa, Blueberries & Strawberries
Instructions
  1. Layer ¼ cup sliced strawberries, ¼ cup sliced raspberries, ¼ cup sliced blackberries, ¼ cup sliced blueberries.
  2. Add a layer of ½ cup yogurt and a layer of ¼ cup granola. Drizzle with 1 tablespoon honey and 1 tablespoon flax blend.
  3. Repeat layers.
  4. Enjoy!

My family LOVED the Kodiak Cakes Flapjacks!  I have to admit that I was intrigued when I received the box of Kodiak Cakes Flapjack and Waffle Mix because they proudly state that the product is all natural, whole wheat, oat and honey, no added fat, cholesterol or sugar.   Two 4 inch flapjacks have only 130 calories but they pack a big punch when it comes to taste!  Finally, we have a guilt-free way to enjoy pancakes!  

Kodiak Cakes is a family owned, Utah based company that was built on a family recipe that was passed down from one generation to the next.  The mix is a snap to make — you only have to add water and you magically have a healthy and flavor packed flapjack batter!

Now, back to our Kodiak Cakes Flapjack Breakfast….

The mix is a snap to make.  Just mix 1 cup of water with 1 cup of the Kodiak Cakes Flapjack Mix… what could be easier?

 

Then whisk….

I poured about 1/4 cup of the batter onto the hot griddle…..

They were bubbly on top and golden on the bottom so it was time to flip them…..

You know, flipping the pancakes is really the tricky part.  You have to make sure the bottom is lightly golden brown and the top is bubbly so the centers will be cooked…

These flapjacks were EASY to flip.  They were just the right size and the batter was just the right consistency.  These flapjacks came out perfect…every time!

Now, at this point, I have to tell you how this all went down….

I made one batch of the Kodiak Cakes, which makes 9 Flapjacks.  The first three went to Bruce, who immediately started eating them AND giving these flapjacks RAVE reviews….The second three went to Kacy who also raved about them….The last three were for me.  While I was cooking the last three ( for me),  Bruce jumped up and mixed up another batch of these delicious flapjacks and cooked the second batch of 9 all by himself!  When I asked him what he thought about these flapjacks, he said ” Why would we ever go back to traditional pancakes?”  The flavor and nutrition really put these flapjacks over the top for us!

The flapjacks were very fluffy and the flavor was of toasted oats with a little maltly wheat.

If you are counting calories, just top these with fresh fruit, yogurt,  sugar free syrup, or fat free whipped topping for a low calorie breakfast. Bruce does not like syrup or butter on pancakes so he sprinkled these flapjacks with powdered sugar.  I will add fresh blueberries to the batter the next time I make these for a nice special touch.

We give the Kodiak Cakes Flapjack and Waffle Mix 5 Stars!  All I can say is run to your nearest store and buy a couple of boxes of this mix because you will be making these flapjacks every morning!  And, with the holidays just around the corner, you can’t beat the convenience and your family will love the taste!

Cheesy and delicious describes this home style hash brown casserole !  I think this is good as a side dish for dinner or breakfast.   This makes a large casserole so sometimes I just divide it in half and freeze half  to bake later.

Ingredients
  • 2 pounds chunk style (or Southern Style) frozen hash brown potatoes, partially thawed
  • 16 ounces sour cream
  • 1 stick of butter, melted
  • 1 can cheddar cheese soup
  • 1 can cream of chicken soup
  • 1 small onion, chopped ( or a handful of dried onion flakes)
Instructions
  1. Mix all of the ingredients together.
  2. Pour into a greased 9 by 13 casserole baking dish.
  3. Bake at 375 degrees for 1 hour.

Ingredients:

2 pounds chunk style ( or Southern Style) frozen hash brown potatoes, partially thawed

16 ounces sour cream

1 stick butter, melted

1 can cheddar cheese soup

1 can cream of chicken soup

1 small onion, chopped  ( or a handful of dried onion flakes )

Mix all of the ingredients together.

Pour into a greased 9 by 13 inch baking dish.

Bake at 375 degrees for 1 hour.  Enjoy!

Cooking bacon for a bunch can be a challenge but it is EASY when you make Vickies Baked Bacon.

Preheat the oven to 400 degrees.

Lay a wire rack into a foil lined rimmed cookie or baking sheet.  Lay bacon slices on the rack.  You will be able to cook 10 to 12 slices this way.  If you need to cook more, use two baking sheets.

For a pretty presentation, scrunch bacon slightly to make a ribbon effect.

Bake for 15 to 18 minutes.  Note:  If you are cooking extra thick bacon, you will have to adjust the baking time.

  • Bacon – allow at least 2 slices per person
Instructions
  1. Preheat oven to 400 degrees.

  3. Lay the bacon on top of the wire rack. All of the bacon grease will drain off as the bacon bakes.
  4. Bake for 15 to 18 minutes.

Bacon really seems to round out a breakfast or brunch.  Always allow at least 2 slices of bacon per person.  I think this is the best way to cook bacon because all of the grease drains off into the foil lined pan as the bacon bakes.  Then the clean-up is a breeze.  Just gather up the aluminum foil and throw away.  If you save your bacon grease, you can drain it out of the pan and into your bacon grease container.  Either way…this is super easy!

  • 1 cup sugar
  • ½ cup butter, melted
  • 1 8 oz tube refrigerated biscuits ( not flaky kind)
Instructions
  1. Mix the cinnamon and sugar together in a medium bowl. Place the melted butter in a separate bowl.
  2. Separate the biscuits. Dip each biscuit into butter, then into cinnamon and sugar mixture.
  3. Place on an ungreased cookie sheet.
  4. Bake at 375 degrees for 12 to 15 minutes, until golden.
  5. Makes 10 Cinnamon Doughnut Puffs

2 tablespoons cinnamon

1 cup sugar

1/2 cup butter, melted

1   8 oz tube refrigerated biscuits  ( not the flaky kind)
