Vickie’s Pineapple Cream French Toast

This is fantastic!  When my girls were growing up, they always wanted me to make this for their friends whenever they had a sleepover at our house.  I love to serve this for a weekend breakfast or a special holiday brunch.

Vickie's Pineapple Cream French Toast

Ingredients

  • 6 thick slices of French bread
  • 3 eggs
  • 3/4 cup half and half cream
  • 8 oz crushed pineapple, including the juice
  • 1/2 cup dark brown sugar
  • 1/2 cup butter, melted
  • Powdered sugar and maple syrup for serving

Instructions

  1. In a small bowl, whisk the eggs, half and half, crushed pineapple with juice and the dark brown sugar.
  2. Slice bread with a serrated knife and place bread slices in a single layer in an oblong baking dish.
  3. Pour the egg mixture over the bread. Cover with plastic wrap and refrigerate overnight.
  4. At serving time, melt 2 tablespoons of butter on a griddle. Add bread slices and cook over medium heat until golden brown on each side. ( You may need to add additional butter as the French toast cooks.
  5. Sprinkle with powdered sugar. Serve with maple syrup.
