I, personally, love chicken.  My son loves chicken.  My husband…. Well, he could take it or leave it.  And, unless it is fried, he usually will leave it.  He is a steak and potatoes kind of guy.

 

So, when it came to testing the Showtime 5500, I thought for sure I was going to rotisserie a chicken and be eating it for my lunch all week.  I was wrong.  I was very wrong.  I even had to go back to the grocery store to supplement since I didn’t have the chicken I KNEW would be left over.  But, how can anyone turn down a bird that looks this good? Right?

I prepped the chicken with some lemon and herbs, tied it with the food cord per the directions, stuck the bird on the rotisserie, and let it cook according to the recommendations based on my bird’s weight.  My home smelled divine.  When my  husband arrived home from work  he was stuck by the aroma, filled up his plate, and ate his whole serving.

 

What impressed my husband the most was the skin on the bird.  It was crisp.  It absorbed a lot of flavor and kept the chicken very juicy.  Best of all, the leftovers (though not as abundant as I had thought) were delicious.  My husband is actually looking forward to my next rotisserie chicken and has plans to explore all our options… turkey, veggies, beef, etc…

 

What impressed me the most was the clean up.  I knew it was easy to use.  I really liked that I could turn the heat off while keeping the rotation going.  So, while my side dishes finished cooking the chicken juices stayed evenly distributed.  But, I was worried that the clean up would be a chore.  Surprisingly, it was very simple.  I had to clean the drip tray which was easily removed and cleaned.  Then, I removed the heat shield and gave it a thorough wipe down.  All that was left was to wipe down the interior walls, clean the rotisserie element and put it all back together for next time.  My total time commitment for the cleanup was about 8 minutes.

A Showtime 5500 Stainless Rotisserie would be a great gift for the young adult who recently moved into their first apartment.  I also recommend it for any busy adult who needs/likes to create healthy meals for themselves and/or their family.  Also, if you know a friend or family member is trying to make better lifestyle changes for their health and wellness then this would be a well received gift!

Crock Pot Seasoning Mix: Hearty Beef Stew

Crock Pot Seasoning Mixes are new in grocery stores and they are a great time saver for busy cooks.  There are currently three mixes available:

These were recently featured in Family Circle Magazine as a “Big Hit”….and I agree!

I reviewed the BBQ Pulled Pork Seasoning mix under a separate post:  BBQ Pulled Pork Seasoning Mix Review .  I really loved the BBQ Pulled Pork Seasoning Mix and was just as pleased with the Hearty Beef Stew Seasoning Mix.  The mix produced a stew with a deep and hearty flavor that simmered in the crock pot all day.

I followed the directions on the packet for the beef stew.  It only took a few minutes to assemble the stew and then the crock pot did the rest of the work!

The stew cooked on low for 8 hours and the flavor was really amazing!  If you are in a hurry, you can cook it on high for only 4 hours. 

In addition to beef stew, this seasoning packet can be used to make several other recipes in the crock pot.  The Crock Pot Seasoning Mix  website has several delicious recipes I want to try.  I want to make the Beef Burgundy next — it looks so easy and good!

    I also want to try the Slow Cooked Pepper Steak recipe.    

I love the versatility of the Crock Pot Seasoning Mixes.  The Hearty Beef Stew Seasoning Mix can be used to make beef stew or a variety of other great dishes such as the two I’ve shown above. 

My next review will be on the Savory Pot Roast Seasoning Mix.  I have decided to make Red Wine Braised Short Ribs with Smashed Potatoes with the Savory Pot Roast Seasoning Mix.  This recipe is on the Crock Pot Seasoning Mix website.

Crock-Pot Seasoning BBQ Pulled Pork Mix Review

Crock-Pot Seasoning Mixes have just been released in stores and what better time of year than fall to review these down-home, comfort food creations!  Any time of year is perfect for crock pot cooking.  In the spring and summer, crock pot cooking helps keep your kitchen cool.  In the fall and winter, crock pot cooking allows you to create delicious soups, stews and main dishes that are full of that wonderful slow cooked flavor.

I think the Crock-Pot Seasoning Mixes are really exciting!  They are a big time saver for a busy cook and allow you to create easy and creative main dishes with only a few ingredients.  There are currently three mixes that are available:

  • BBQ Pulled Pork
  • Savory Pot Roast Mix
  • Hearty Beef Stew Mix

The BBQ Pulled Pork was first on my list!  As many of you know, I have deep Southern roots and BBQ is near and dear to my heart. ( In fact, I was shocked when I moved north and discovered that there is not one BBQ barn, shack, or restaurant within a 60 mile radius of here!)

I made the BBQ Pulled Pork exactly as the directions on the packet suggested.  I used a  3 pound Boston Butt roast along with the Crock-Pot BBQ Pulled Pork Seasoning Mix, 1/2 cup ketchup, 1/2 cup dark  brown sugar, 1/3 cup cider vinegar and 1 cup water.  I cannot even begin to describe the wonderful aromas that came drifting out of my kitchen as the pulled pork cooked away in the crock-pot all day!

At the end of the cooking time, I “pulled” the pork……

……and served it up on buns!

I LOVED the flavor of this pulled pork!  It reminded me of BBQ I used to eat in the South —-sweet yet spicy.  I will definitely make this again ( and again ) when I’m in the BBQ mood. 

The Crock-Pot Seasoning Web Site  has additional recipes you can make that are creative uses for these mixes.  I can’t wait to try their recipe for BBQ Apple Pork Chops!  Thick pork chops cook in the slow cooker with onion, apples, apple juice, white vinegar, mustard and of course the Crock-Pot BBQ Pulled Pork Seasoning Mix.  It looks absolutely wonderful!  I’ll be reviewing the other mixes as well, but for now…..I’m thinking about having another Pulled Pork Sandwich!

Vickie’s Almost Famous Chili

Fall is for football games, pumpkins and mums at the front door and a big pot of Chili simmering on the stove.   I was in a Chili Cook Off  years ago with several girlfriends and I discovered that there are about as many recipes for Chili as there are people who love it!  We called our team “The Red Hot Chili Peppers”.  Our recipe had about 25 ingredients and cooked all afternoon.  We won the Chili Cook Off but I’m sure none of us ever made that Chili recipe again because it had too many ingredients and cooked too long for all of our busy schedules.  That’s why I call my recipe “Almost Famous”.  I never won a Chili Cook Off with this recipe – but it scored big with everyone who has ever tasted it.

This recipe only has to simmer 15 minutes – so it can easily be cooked after a long day at work.  So, grab your Chili pot and get ready to round up some great chili for your gang!

Ingredients
  • 1 pound ground beef
  • 16 ounces tomato sauce
  • 15 ounces chili beans ( I use medium, but feel free to use mild or hot)
  • 15 ounces dark red kidney beans, drained
  • 2 tablespoons instant dried onion flakes
  • 2 packages chili seasoning packets ( that are supposed to each season 1 pound of beef)
  • ⅓ cup water
  • 1 clove garlic, finely chopped
  • Condiments to sprinkle on top of each bowl of chili: chopped onions, Fritos corn chips, sour cream, grated cheddar cheese
Instructions
  1. Brown ground beef and drain well.
  2. Add remaining ingredients. Stir to blend well.
  3. Bring to a boil, reduce heat and simmer 15 minutes, stirring occasionally.
  4. Serve piping hot with the condiments sprinkled on top. Enjoy!

Quick Chicken Corn Chowder

Fall is in the air and it’s time to get a big pot of Quick Chicken Corn Chowder simmering on the stove!   

Chowder is typically a thick, rich soup that is made with cream.  This Quick Chicken Corn Chowder is chocked full of vegetables and meat to make a delicious and warming meal on a chilly Fall or Winter evening.  You can have this on the table in less than 30 minutes—-that’s less time than it takes to get a carry-out pizza!

Ingredients:

2 tablespoons butter

1/4 cup chopped onions

1/4 cup chopped celery

1 jalapeno pepper, seeded and chopped or 2 tablespoons canned chopped jalapeno peppers ( not pickled)

2 tablespoons flour

3 cups milk

2 cups chopped deli rotisserie  chicken

1 1/2 cups frozen corn

1 can cream style corn

1 teaspoon thyme

1/4 teaspoon ground red pepper

1 /8 teaspoon salt

Melt butter in a large soup pot over medium heat.  Add onion, celery and jalapeno; cook for 3 minutes or until tender, stirring frequently.

Add flour; cook 1 minute, stirring constantly.  

Stir in milk and blend well.  Add remaining ingredients.  Bring to a boil.  Reduce heat and simmer 5 minutes.

Serve up a big steaming bowl of Quick Chicken Corn Chowder topped with crumbled pieces of my Microwaved Bacon ( See Success Secret under a separate post).

Quick Chicken Corn Chowder
 
Recipe type: Soups
Serves: 4
Ingredients
  • 2 tablespoons butter
  • ¼ cup chopped onions
  • ¼ cup chopped celery
  • 1 jalapeno pepper, seeded and chopped OR 2 tablespoons canned chopped jalapeno peppers ( not pickled )
  • 2 tablespoons flour
  • 3 cups milk or a combination of milk and half and half
  • 2 cups chopped deli rotisserie chicken
  • 1½ cup frozen corn
  • 1 can cream style corn
  • 1 teaspoon thyme
  • ¼ teaspoon ground red peppers
  • ⅛ teaspoon salt
Instructions

Crab Cake Lunch on Kaanapali Beach

What could be better than a crab cake lunch on Kaanapali Beach?

Next week I will feature my Crab Cake recipe with the trick I use to keep the crab cakes from falling apart when I cook them.  Crab cakes are really very easy to make and you can either use fresh crab or canned crab.  My recipe uses canned crab since it’s not always easy to buy fresh crab.   

Here are the wonderful crab cakes I had for lunch on Kaanapali Beach.  I like how they served them on wilted fresh spinach and I’ll be using that same idea when I feature my Crab Cake recipe next week.  I also liked the grilled lemon half as an extra nice touch…

I think a trip to Maui is really a trip of a lifetime!  The beauty is abundant.  Walks along the pristine beaches are invigorating and there is so much to enjoy in the nature around us.  Kaanapali Beach has a lot to offer in not only beauty but also things to do.  You can stay busy every minute if you want to.  The Westin has scenic helicopter tours, hiking trips, shopping tours plus much more.   I have decided not to do a lot of the tours and activities.  I just want to soak up some relaxation while I am here.

Rib Eye Peppercorn Steaks with Brandy Sauce

Rib Eye Peppercorn Steaks are super easy to make in less than 10 minutes.  The steaks are lightly pressed with crushed peppercorns and then sauteed quickly in butter and oil.  Then you combine white wine, lemon juice and a little brandy in the pan drippings for the sauce.  So easy and so good!   

 

Rib Eye Peppercorn Steaks

Ingredients
  • 2 tablespoons peppercorns
  • 2 to 4 rib eye steaks
  • 3 to 4 tablespoons oil
  • ¼ cup butter
  • ½ cup white wine
  • 2 tablespoons brandy
  • little lemon juice
  • salt and pepper to taste
Instructions
  1. Crush the peppercorns and press well into steaks using a wooden spoon.
  2. Heat oil and butter in pan, add half the butter. When foaming, saute steaks 4 to 6 minutes on each side, depending on the thickness of the steaks and how done you like them. Add remaining butter if needed.
  3. Remove to heated platter to keep warm.
  4. Add wine, brandy and lemon juice to the drippings in the pan and bring to a boil. Season with salt and pepper.
  5. Pour the sauce over the steaks. Serve at once.

Ingredients:

2 to 4 rib eye steaks

3 to 4 tablespoons oil

1/4 cup butter

1/2 cup white wine

2 tablespoons brandy

little lemon juice

salt and pepper to taste

Crush the peppercorns and press well into the steaks using a wooden spoon.  You can crush the peppercorns as I am doing, or put them in a Zip lock bag and pound with the flat side of a meat mallet.

Heat oil in pan, add half the butter.  When foaming, saute steaks 4 to 6 minutes on each side, depending on the thickness of the steaks and how well done you like them.  Add remaining butter if needed.

Remove to a heated dish to keep warm.  Add wine, brandy and lemon juice to the pan and bring to a boil.  Season with salt and pepper.

Pour the sauce over the steaks.  Enjoy!

Hamburger Quiche

You can have this ready for the oven in about 10 minutes and it bakes in 35 to 45 minutes.  I use a frozen deep dish pie crust for convenience.  Your family is going to love this!  You may want to make two and freeze one for later.  Enjoy!

  • 9 inch deep dish frozen pie shell
  • ½ pound ground beef
  • ½ cup real mayonnaise
  • ½ cup milk
  • 2 eggs, beaten
  • 1 tablespoon cornstarch
  • ¼ cup chopped green pepper
  • ¼ cup chopped green onion
  • 1½ cups shredded cheddar or Swiss cheese
  • Salt and pepper
Instructions
  1. Brown the ground beef and drain.
  2. Mix mayonnaise, milk, cornstarch and eggs.
  3. Stir in meat, cheese, onion and pepper.
  4. Pour into unbaked frozen deep dish pie shell. Place on a cookie sheet and bake at 350 degrees for 35 to 45 minutes or until center is set.

Ingredients:

9 inch frozen deep dish pie shell

1/2 pound ground beef

1/2 cup mayonnaise

1/2 cup milk

2 eggs, beaten

1 tablespoon cornstarch

1/4 cup chopped green pepper

1/4 cup chopped green onion

1 1/2 cups shredded cheddar or Swiss cheese

Salt and pepper

 

Brown the ground beef and drain.

Mix mayonnaise, milk, cornstarch and eggs.  Stir in meat, cheese, green onion and green pepper.  Add salt and pepper.

Pour into unbaked pie shell.  Place on a cookie sheet and bake at 350 degrees  for 35 to 45 minutes or until center is set.

Serves 4 to 6

Southern Peach Iced Tea Recipe

Here is an iced tea recipe with a real Southern flair!  

It’s not hard to brew iced tea.  In fact…it’s one of the easiest drinks you can make at home.  You can almost always find  a big pitcher of either this Southern Peach Tea or my  Southern Sweet Tea on my kitchen counter — ready for my family to enjoy.      

My friend, Oma, gave me this recipe and I make it all of the time.  I did have trouble finding the Bigelow Peach Tea in our grocery stores so I had to order it off of the internet.  But, it was worth the effort…I make this tea all of the time!

 

Southern Peach Tea
 
Recipe type: Beverage - non alcoholic
Ingredients
  • 5 Regular size tea bags
  • 1 Bigelow Peach tea bag
  • 1 Cup of sugar ( yes, that's right )
Instructions
  1. Microwave water in a glass jar for 5 minutes, or until boiling. If you don't have a glass jar, then you can boil the water in a pan on the stove.
  2. Place the 6 tea bags in the hot water and cover with a lid. Steep the tea bags in the hot water for 5 minutes.
  3. Place a spoon into a glass pitcher - this will help protect your pitcher from cracking when you pour in the steeped hot tea. Add the sugar.
  4. Pour the hot tea brew into the pitcher. Remove the spoon and fill with cold water.
  5. Serve over crushed ice.

 

Microwave about 2 cups of water in a glass jar for 5 minutes, or until boiling.  OR, you can boil water in a pan on the stove as well.

Place the tea bags into the hot water and cover with a lid.  Steep the tea bags in the hot water for 5 minutes.

Place a metal spoon into a glass pitcher.  This helps to absorb some of the heat and protects your pitcher from cracking when you pour in the hot tea brew.  Pour the hot tea brew into the pitcher.  Add the sugar to the pitcher.

Fill the pitcher with cold water.

Stir well and serve the tea over crushed ice.

This will give you a great taste of the South!  Enjoy!

Vickie’s Lemonade Pie

My Mom gave me this Lemonade Pie recipe over 30 years ago.  It tastes just like Key Lime Pie! It is great for easy entertaining!  It will keep several days in the refrigerator — if it lasts that long!

Ingredients
  • 6 oz frozen lemonade concentrate, partially thawed
  • 8 oz Cool Whip, thawed
  • 1 can Sweetened condensed milk
  • 1 Graham cracker crust
  • Few drops of yellow food coloring
Instructions
  1. Mix lemonade concentrate and sweetened condensed milk together.
  2. Fold in Cool Whip and a few drops of yellow food coloring.
  3. Pour into a graham cracker crust and chill.

Directions:

Mix lemonade concentrate ( I used half of a 12 oz. can ) and sweetened condensed milk together.

Fold in Cool Whip and a few drops of yellow food coloring.

Pour into graham cracker crust and chill.
