We entertain a lot in our home and we often have overnight guests.  I’m always looking for easy breakfast recipes that I can make the night before and this one is terrific!  I set up a breakfast bar where guests can serve themselves.  I usually set out maple syrup, brown sugar, blueberries, strawberries or other toppers and let everyone make their own “special” oatmeal.

This easy recipe for Crock Pot Overnight Oatmeal is great for a breakfast bar. Just set out maple syrup, brown sugar, blueberries, strawberries or other toppers and let everyone make their own “special” oatmeal.

Ingredients
  • 2 cups old fashioned oats
  • 6 cups water
  • cinnamon
  • chopped apples or other fruit
  • 2 tablespoons butter
Instructions
  1. Butter the crock pot. (I sue the 2 quart insert of my crock pot for this recipe)
  2. Add the oats and water.
  3. Stir in the chopped apples.
  4. Sprinkled with cinnamon.
  5. Dot with 2 tablespoons of butter.
  6. Cover and cook on low overnight…..this will be ready in the morning!

I like to add diced apples or dried cranberries when I add the water and oats.  If you want to add blueberries or raisins, add them in the morning…..or set them out as options on your Oatmeal Breakfast Bar Buffet!

This is also a terrific recipe to use once the kids go back to school.  Mornings are always so rushed and this recipe is ready when you are!  Try spooning this into paper cups and the kids can eat this on the run!  It’s a great way to make sure everyone starts their day with a healthy breakfast!

 

 

 

Jamaican Me Crazy Ribs

Jamaican Me Crazy Ribs

With a sweet and spicy sauce, these ribs are a hit!  You’ll need just 10 minutes to get these BBQ Pork Ribs into the crock pot for slow all-day cooking.

Serves: 5
Ingredients
  • 2 racks of pork ribs
  • 4 tablespoons olive oil
  • ½ cup Caribbean Jerk Seasoning
  • 2 bottles Kraft Honey BBQ Sauce ( 18 oz. each)
  • 4 tablespoons apricot preserves
  • 3 tablespoons honey
Instructions
  1. Cut the ribs into serving size pieces. ( I use kitchen scissors)
  2. Drizzle with oil and rub with the jerk seasoning.
  3. Place ribs in 5 or 6 quart slow cooker.
  4. Combine the remaining ingredients; pour over the ribs.
  5. Cover and cook on low for 6 to 8 hours or until the meat is tender.

Use kitchen scissors to cut the ribs into serving size pieces.

Drizzle with olive oil and rub with the jerk seasoning.

Place in a 5 or 6 quart crock pot.  Combine the remaining ingredients for the sauce.

Pour the sauce over the ribs.

Gobs of Chocolate is one of many great chocolate desserts you can make in the crock pot!

Wouldn’t you love to make chocolate desserts like grandma used to make….but in the crock pot?

Gobs of Chocolate is just one of the many yummy chocolate desserts you can make in the crock pot!  I remember all of the great chocolate desserts my grandma used to make…and the wonderful smells that came out of the kitchen when she was cooking.  This recipe takes me back to her kitchen when I smell this gooey chocolate dessert cooking in the crock pot.  And…the best part is the crock pot does all of the work!  It cooks in only 2 hours on High so it’s also a great recipe for entertaining.  I made this last week and there wasn’t even a bite leftover!  Serve it with vanilla ice cream and get set for some WOWS!

Wouldn’t you love to make desserts like Grandma used to make….but in the crock pot? Gobs of Chocolate is that oooey gooey chocolate dessert we all crave! So…grab you crock pot and get ready to make your chocolate dreams come true!

Ingredients
  • 1 box Betty Crocker fudge brownie mix
  • ½ cup butter melted
  • 4 eggs
  • 1 pouch Betty Crocker chocolate chip cookie mix
  • Vanilla ice cream, for serving
Instructions
  1. Spray a 4½ quart crock pot with cooking spray and lightly dust with flour.
  2. In a large bowl, mix the brownie mix with ¼ cup melted butter and 2 of the eggs.
  3. In another large bowl, mix the chocolate chip cookie mix, remaining ¼ cup melted butter and remaining 2 eggs.
  4. Drop alternate spoonfuls of the brownie mix and chocolate chip cookie batters into the crock pot.
  5. Cover and cook on high for 2 hours or until cake is set in the center.
  6. To serve, spoon cake out of the crock pot and top with big scoops of vanilla ice cream.

I love oven roasted vegetables and now I’m going to show you how to make “Crock Pot Roasted Vegetables”.  The secret ingredient is one packet of Hidden Valley Ranch Salad Dressing Mix.

Ingredients
  • 6 cups fresh vegetables ( broccoli, baby carrots, cauliflower, etc)
  • 1 packet of Hidden Valley Ranch Salad Dressing Mix
  • ¼ cup water
Instructions
  1. Spray the crock pot with cooking spray. (I used my 2 quart insert)
  2. Wash and trim the vegetables and put them into the crock pot.
  3. Sprinkle with the dry ranch salad dressing mix
  4. sprinkle with the water.
  5. Cover and cook on low for 2½ to 3 hours.

You can use any combination of fresh vegetables that you like..

Every cook needs some easy crock pot recipes for those busy days we all have!  This Crock Pot Green Bean recipe will round out any meal and your crock pot does all of the work!  Not only does the crock pot do all of the work, but this recipe only has 5 main ingredients ( potatoes, fresh green beans, onion, ham cubes and chicken broth) so it’s quick and easy to assemble and economical to make.

We are heading into fresh green bean season which means the grocery store and framers markets will have an abundance of them.  My local grocery store carries fresh green beans all year long so I try to cook fresh green at least once a week.  Easy crock pot recipes like this allow even the busiest person to cook wholesome and nutritious foods.

Ingredients
  • 8 small red potatoes, scrubbed and halved
  • 16 oz fresh green beans, washed and snapped
  • 1 large onion, cut into eight wedges
  • 16 oz fully cooked ham cubes
  • 32 ounces chicken broth
  • salt and pepper
Instructions
  1. Add all of the ingredients to the crock pot. Cover and cook on low 8 to 10 hours.

My Provencal Beef Stew goes together in a snap and your crock pot does the rest of the work!  This stew is full of hearty beef chunks, bacon, potatoes, baby carrots, whole pearl onions and mushrooms and cooks up in a tomato and brown gravy sauce.  This is sure to warm you up on a cold winter day!   Here, I’ve served Provencal Beef Stew in my “Homemade” Bread Bowls that are made with frozen bread dough.  Check out that recipe too!

Serves: 8
Ingredients
  • 2 pounds beef stew meat
  • 4 bacon slices, cut in 1 inch pieces
  • 2 12 oz jars brown gravy
  • 14.5 oz can diced peeled tomatoes with the juice
  • 1 teaspoon dried thyme leaves
  • ½ teaspoon salt and ¼ teaspoon black pepper
  • 1 pound fresh whole baby carrots
  • 8 new red potatoes, quartered
  • 10 oz bag pearl onions OR 2 small onions, cut into eights
  • 8 oz whole fresh mushrooms
  • 1 cup red wine ( optional – but I always add it)
Instructions
  1. In medium skillet, cook the bacon ( I use kitchen scissors to cut it up quickly) and the beef stew meat until browned. Do not drain.
  2. Combine the beef stew meat, bacon and liquid in the crock pot along with the rest of the ingredients.
  3. Cook on low for 8 to 10 hours.

Ingredients..( The only thing I added was the optional 1 cup of red wine.  I really like the depth of flavor the wine adds to this stew)

Use kitchen scissors to cut the bacon into pieces.  Brown the bacon and stew meat in a skillet.

Add the browned meat along with the liquid from the skillet to a sprayed crock pot.  Add the remaining ingredients.  Note:  If you are using the pearl onions, boil them separately for about 3 minutes, cut off the ends and the skins should slide right off.  The other option is to use 2 small onions and cut them into eights , but I really like the look of the pearl onions best.

Now just set the crock pot on low and let it simmer away for 8 to 10 hours.  You won’t believe the aroma that will fill your kitchen as this stew cooks!  If you don’t have 8 to 10 hours to let this cook on low…no worries!  You can let it cook on high for 3 hours and then turn it to low for another 3 hours and that will work just fine.

Mom’s Sunday Pot Roast Recipe

My Mom made this pot roast recipe every Sunday when I was growing up.  Slow cooker recipes are great for the busy cook!  I’ve added the secret trick to lump free gravy and with the crock pot convenience this is hard to beat!

This crock pot pot roast dinner is full of down-home goodness!  And, I’ve included a “success secret” for lump free gravy — every time!

Mom’s Sunday Pot Roast Dinner
 
Recipe type: Main Dish, Crock Pot
Serves: 6
Ingredients
  • 3 cups baby carrots
  • 6 to 7 potatoes, peeled and cut in half
  • 3 pound chuck roast
  • 1 can Cream of Mushroom soup
  • 1 can French Onion soup
  • 2 onions, peeled and cut in half
  • Salt and pepper
Instructions
  1. Spray the crock pot with cooking spray.
  2. Place the baby carrots and potatoes into the crock pot. Season with salt and pepper.
  3. Place the chuck roast on top of the vegetables. Season with salt and pepper.
  4. Pour the Cream of Mushroom soup and French Onion soup on top of the roast.
  5. Place the onions on top.
  6. Cook on LOW for 10 hours.
  7. Remove the roast and vegetables. Turn the crock pot on HIGH and sprinkle in Wondra instant flour. Whisk until thickened – about 1 minute.

Ingredients:

3 cups baby carrots

6 to 7 peeled potatoes, cut in half

3 pound chuck roast

1 can Cream of Mushroom soup

1 can French Onion soup

2 onions, peeled and cut in half

Salt and pepper

 

Spray the crock pot with non stick cooking spray.  Place the carrots and potatoes in the crock pot and season with salt and pepper.

Lay the roast on top of the vegetables.  Sprinkle with salt and pepper.

Pour one can of Cream of Mushroom soup and one can of French Onion soup on top of the roast.  Place the onions on top.

Cover and cook on LOW for 10 hours.

 

When ready to serve, remove the roast and vegetables to a platter. Turn the crock pot on HIGH and whisk Wondra instant flour into the liquid to make the gravy.  Whisk until thickened – about 1 minute.
