Robust Risotto

Risotto originated in Italy and is a rice dish that is cooked in broth to a creamy (dreamy!!)  consistency.  Risotto can be served as a first course – with some crusty bread – as we are doing  here.  As a first course, it is great paired with a Brut Champagne.  Check out this great pairing at Velvet Palate.

Risotto is typically cooked in a meat, fish or vegetable based broth.  This recipe uses chicken broth ( low sodium) .  Many types of Risotto contain Parmesan cheese, butter and onion.  This recipe uses Parmesan cheese, butter and shallots.  Then we ramp it up to robust by adding 1/4 pound diced asparagus, 1/4 pound sliced shiitake mushrooms and Prosciutto (which is a type of Italian bacon).

You have to use a high starch rice to make risotto and this recipe uses Arborio Rice.  This type of rice has the ability to absorb liquids and to release starch and so it is stickier than the long grain rice varieties.  

While there are many variations on Risotto, the basic preparation remains the same.  

  • The rice is first cooked in onion ( or shallots ) and butter or olive oil to coat each grain in a film of fat.  
  • Then, red or white wine is added and has to be absorbed by the grains.  This recipe uses white wine.
  • When the wine is absorbed, the heat is raised to medium and very hot stock ( I used chicken stock in this recipe) is added in small amounts while stirring gently, almost constantly ( this process is what creates the smooth creamy-textured liquid).  
  • At this point, it is removed from the heat and the finely grated Parmigiano-Reggiano cheese is vigorously stirred in to make the texture as creamy and smooth as possible.  
  • This recipe adds the cooked asparagus and mushrooms at this point and is then topped with the scrumptious cooked prosciutto for a robust and over the top risotto!             

Robust Risotto
Serves: 4
  • 6 cups low sodium chicken broth, heated
  • 4 ounces diced prosciutto
  • 2 tablespoons olive oil, divided
  • ¼ pound asparagus spears, trimmed and cut into small pieces
  • ¼ pound sliced mushrooms
  • 1 tablespoon minced shallot
  • 2 teaspoons minced garlic
  • 1½ cups arborio rice
  • ½ cup dry white wine, heated
  • 1 cup to 1½ cups shredded Parmigiano-Reggiano cheese
  • Salt and freshly ground black pepper to taste
  1. Simmer the broht in a saucepan. Keep warm.
  2. Heat the wine in a separate saucepan and keep warm.
  3. Add 1 tablespoon olive oil to large pan and heat. Saute the prosciutto for 3 to 5 minutes or until tender. Remove from skillet and set aside.
  4. Add the asparagus and saute 2 minutes. As they begin to get tender, add the sliced mushroom and cook an additional 3 minutes or until the vegetables are tender and the liquid is removed. ( do not include any of this liquid or the risotto will not be creamy!). Remove from skillet and set aside.
  5. Add the additional 1 tablesppon of olive oil to the skillet and sweat the shallots and garlic until translucent, about 3 minutes. Stir in the DRY rice and saute until each grain is coated in oil.
  6. Deglaze the pan with the warm white wine and stir until completely absorbed, 1 to 2 minutes.
  7. Now, start adding the hot broth to the pan in ½ cup increments; simmer and stir frequently until each addition is almost completely absorbed before adding the next, about 45 minutes total.
  8. Lastly, stir in the cooked asparagus, mushrooms and the grated Parmigiano-Reggiano cheese. Season with salt and pepper, top with cooked prosciutto.
  9. Enjoy!!

This Robust Risotto is a little more time consuming than my other Make Life Special recipes but I was requested to feature this recipe.  I think it is really worth the effort because the layers of flavors in this dish are outstanding.  This really is very easy to make.  Here are the how-to photos:

You can prepare the Mustard Sauce a day or so ahead of time to let the flavor really develop.  This Mustard SAuce is great on pork tenderloin or prime rib.  If you want to tone down the flavor, just use less dry mustard.  I love the flavor so I make the sauce exactly as I have it here.  Enjoy!

I’m mother to a fabulous little boy.  My fabulous little boy loves messy foods.  He isn’t all that messy when he eats them, but he seems to prefer foods that are juicy, slimy, squishy or crumbly.  I mentioned that he is a boy, right?


I’ve been struggling to figure out how to transport his favorite snacks for our little outings.  Plastic baggies make a mess of things if they didn’t seal well.  And those crumbly snacks would be all crumbles when we got to our destination.  A lot of plastic containers are full of BPA and/or PVC.  So, even if they did work well, the hyper vigilant mom in me wants to limit my son’s exposure.

I baked my Baked Ravioli Casserole in the 9 X 13 inch Pyrex  dish and I LOVED the easy grab extended handles!  They made it so easy to get my casserole in and out of the oven. 

The plastic snap on cover is great to use if you make a dish ahead of time and refrigerate it until time to bake; or if you have leftovers and need to store your dish in the refrigerator.  The lid snaps on inside the extended handles so the easy grab handles are always ready for you to grab and go.

The set includes a beautiful carrying case for portability.  It will insure that you don’t have any spills in your car if you are transporting food to a potluck or picnic.  The temperature controlled bag includes a hot/cold pack.

“The Rosie’s Bakery All-Butter, Cream-Filled, Sugar-Packed Baking Book” by Judy Rosenberg

I am happily baking my way thru this cookbook review of The Rosie’s Bakery All-Butter, Cream-Filled, Sugar-Packed Baking Book!  With a title like that and over 250 decadent recipes, who could resist this cookbook?  Every recipe is a winner!

Tonight we are having company over for Chili and I have decided to set up a brownie sundae bar with Rosie’s Chocolate Orgasm Brownies ( that’s really the name!) along with ice cream and several sundae toppings for an over the top dessert.

Look at how yummy they are:

There are so many things that I love about this cookbook!  First of all, every recipe is easy and Judy Rosenberg walks you thru the recipe step by step  — it’s like having your own baking instructor right in the kitchen with you!  And speaking of the author, after reading the Introduction to the book entitled “Meet Rosie”, I feel like Judy Rosenberg is an old friend!

She did not start out to be a baker.  In fact, she has no real formal training in baking.  She says people are absolutely amazed when she tells them that everything she knows about baking, she learned on her own.  I think that is why I LOVE her recipes and this cookbook so much.  She relates to ME.  I can easily understand her explanations on the various steps in baking in Chapter 1 ” Common Sense Baking”.  She says, ”  I don’t mean to denigrate expertise, but all this training business should be put in perspective.  Baking does involve chemical reactions, but so does taking an aspirin.  While you may not reach baker’s heaven on your first try, if good food is important to you, if you like desserts, and if you count, none of the recipes in this book are beyond you.”  

Judy started out baking in her second-floor apartment in Cambridge Massachusetts and selling her wares to a local Cheesecake shop.  It was during this time that she perfected some of her very famous recipes – Boom Booms, Harvard Squares, Chocolate Orgasms, Queen Raspberries- and the legend was born.  She went on to open her own shop three years later and named it Rosie’s.  The rest is history….and her success and recipes are inspiring.

This book combines the best of her previous books, Rosie’s Bakery All-Butter, Fresh Cream, Sugar-Packed, No-Holds-Barred Baking Book and Rosie’s Bakery Chocolate-Packed, Jam-Filled, Butter-Rich, No-Holds-Barred Cookie Book , and adds 40 never-before-published recipes.  It’s a collection of ultimate, honest to goodness , indulgent dessert delights!

Most of the recipes are simple to make and don’t use a ton of ingredients.  Rosie’s Award Winning Brownies, featured on page 259 of the book, only have 6 main ingredients (plus nuts if you choose to add them) .  Judy spent years perfecting this fantastic recipe and now it can be yours!  The brownie recipe is the basis for the Chocolate Orgasims which I mentioned earlier.  Judy says, ” To me, brownies constitue one of the basic food groups, and these were simply the most luscious to be had.”  I agree!

Holiday Gift Basket with Kuhn Rikon



The Kuhn Rikon Veggie Cutting Board and Paring Knife Set is one of the cutest cutting boards I have ever seen.  It is available in Eggplant, Green Pepper and Tomato.  The set comes with one cutting board and two sheathed paring knives (one serrated; one straight edge).

I love the fact that the cutting board has a ridge along the edge.  I’ve found this very helpful when dealing with juicy foods such as tomatoes and pineapple.  It is really nice to just dump the juices in the sink and not have to wipe down a sticky counter!  Best of all, the whole set is dishwasher safe!  I love it when I don’t have to hand wash anything after dinner.  I also really like that the cutting board can be flipped over and used for something else without having to rinse it off.  It’s nice to have tomatoes in a salad that don’t taste like garlic from the pasta sauce.  Not that I’ve ever had that problem…

The quality of the items is above average.  The cutting board is light weight, yet durable.  And, the knives are very sharp!  (The mommy in me has to remind you to supervise your kiddos if they are handling these knives.  They are really, really sharp!)

Since the knives are so sharp, I am a huge fan of the knife sheaths.  I like being able to toss these in a drawer and not worry about slicing my fingers looking for them later.

I think that this would be a wonderful gift for the college student in your life who is starting out on their own (and in need of EVERYTHING).  The fun colors and shapes would also make this a great gift for the budding chef in your family.  And, since I believe there is no such thing as too many knives or cutting boards, I can’t imagine anyone who cooks not liking this colorful gift!

“Handwritten Recipes” by Michael Popek

Handwritten Recipes by Michael Popek is a delightful gift idea for anyone on your list who loves recipes and cookbooks!  I read cookbooks like some people read novels and I thoroughly enjoyed this book.  However, this is the first cookbook I have ever read that was written by someone who is not a cook.  The author makes that clear right up front — in the introduction of the book.  He says, ”  First, let’s get things straight.  I’m a bookseller, not a cook.”  Michael works in his family’s used bookstore which boasts over 70,000 books and over 3,000 cookbooks.  Michael found all of the recipes in Handwritten Recipes on handwritten pieces of paper inside some of the books in his bookstore.

Here is the synopsis of Handwritten Recipes  from the back of the cover of the book:

Leaf through your old books, and you’re likely to find a bit of paper with a recipe written in a familiar (or not so familiar) hand.  It could be a family secret finally divulged, a scribbled interpretation of something seen on TV, even a culinary experiment long since forgotten.  What happens to these recipes when the books are passed on?  …..

Crock-Pot Seasoning BBQ Pulled Pork Mix Review

Crock-Pot Seasoning Mixes have just been released in stores and what better time of year than fall to review these down-home, comfort food creations!  Any time of year is perfect for crock pot cooking.  In the spring and summer, crock pot cooking helps keep your kitchen cool.  In the fall and winter, crock pot cooking allows you to create delicious soups, stews and main dishes that are full of that wonderful slow cooked flavor.

I think the Crock-Pot Seasoning Mixes are really exciting!  They are a big time saver for a busy cook and allow you to create easy and creative main dishes with only a few ingredients.  There are currently three mixes that are available:

  • BBQ Pulled Pork
  • Savory Pot Roast Mix
  • Hearty Beef Stew Mix

The BBQ Pulled Pork was first on my list!  As many of you know, I have deep Southern roots and BBQ is near and dear to my heart. ( In fact, I was shocked when I moved north and discovered that there is not one BBQ barn, shack, or restaurant within a 60 mile radius of here!)

I made the BBQ Pulled Pork exactly as the directions on the packet suggested.  I used a  3 pound Boston Butt roast along with the Crock-Pot BBQ Pulled Pork Seasoning Mix, 1/2 cup ketchup, 1/2 cup dark  brown sugar, 1/3 cup cider vinegar and 1 cup water.  I cannot even begin to describe the wonderful aromas that came drifting out of my kitchen as the pulled pork cooked away in the crock-pot all day!

At the end of the cooking time, I “pulled” the pork……

……and served it up on buns!

I LOVED the flavor of this pulled pork!  It reminded me of BBQ I used to eat in the South —-sweet yet spicy.  I will definitely make this again ( and again ) when I’m in the BBQ mood. 

The Crock-Pot Seasoning Web Site  has additional recipes you can make that are creative uses for these mixes.  I can’t wait to try their recipe for BBQ Apple Pork Chops!  Thick pork chops cook in the slow cooker with onion, apples, apple juice, white vinegar, mustard and of course the Crock-Pot BBQ Pulled Pork Seasoning Mix.  It looks absolutely wonderful!  I’ll be reviewing the other mixes as well, but for now…..I’m thinking about having another Pulled Pork Sandwich!

Enjoying Tea in Recipe Form

  • 9 tea bags of Teatulia Earl of Bengal Tea
  • 2 Cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup confectioner's sugar
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon water
  • 1 cup unsalted butter, softened and cut into pieces
  1. Grind the tea from the tea bags into a fine powder ( using a mortar and pestle works best).
  2. Pulse together all dry ingredients in a food processor and then add the vanilla, water and butter.
  3. Pulse together until the dough is formed. Divide the dough in half.
  4. Place each half on a sheet of plastic wrap and roll into a 12 inch log, about 2 inches in diameter. Chill both wrapped logs for 30 minutes.
  5. Preheat oven to 375 degrees. Unwrap dough logs ( one at a time to keep cold and hard) and slice into disks about ⅓ inch thick.
  6. Place cookies on parchment or foil lined baking sheet about an inch apart.
  7. Bake until edges are brown. ( 10 to 12 minutes)
  8. Let cool for a moment and then trasfer to wire racks. Enjoy!


Next, I want to introduce you to Teatulia’s spin on a Mint Julep – Teatulia’s Green Tea Mint Julep.  I am a Southerner at heart.  I love the Kentucky Derby.  I love wearing a big fancy hat.  And, I love a Mint Julep.  Teatulia’s version sounds amazing and I have decided that, while watching the Derby on TV this year, I will be enjoying this wonderful drink!

Recipe type: Drink
Serves: 1
  • 2 ounces Teatulia green tea
  • 1.5 ounces Stranahans Colorado whisky
  • Half a lemon, squeezed
  • 1.5 ounces simple syrup
  • Mint
  1. To make the drink, start with a sugar rimmed cocktail glass.
  2. Muddle the mint, lemon juice and sugar in the glass.
  3. Then, add crushed ice, and pour the tea and the whiskey over the ice.
  4. Garnish with mint and lemon.
  5. Drink!


Lastly, I want to share their Green Tea Poached Salmon recipe.  Salmon is my favorite fish to eat,  I think this would go well with some lightly roasted asparagus.


Green Tea Poached Salmon
Recipe type: Main Dish
Serves: 2
  • 4 bags Teatulia Green Tea
  • 2 half pound salmon steaks
  • 2 cups boiling water
  • 5 cloves minced garlic
  • 1 teaspoon ground ginger
  • 1 teaspoon sesame oil
  • 1 tablespoon olive oil
  • 1 teaspoon salt/pepper
  • ½ lemon
  1. Steep tea in water for 2 to 5 minutes, remove tea bags and add garlic, ginger and sesame oil to the tea.
  2. In skillet, heat oil and once hot, add salmon steaks. If salmon still has skin, place skin side up and sear other side. Sear for 2 to 3 minutes.
  3. Turn salmon over and add tea mixture.
  4. Bring to a boil, reduce heat, cover and poach for 6 to 9 minutes.
  5. Salmon should flake easily with a fork.
  6. Once plated, squeeze lemon over salmon and sprinkle with salt and pepper. Enjoy!
